Fourth, the effect of water activity and moisture content on peanut sugar products:

1. Water activity: during the boiling process, the water activity gradually decreases, when the syrup concentration exceeds 90%, the water activity is less than 0.7, which can meet the storage requirements; the water activity is significantly affected by the syrup concentration, mainly determined by the amount of peanut kernels added and the syrup concentration

2. Moisture content: the moisture content of syrup increases and the peanut particle size decreases, and the oxidation rate of peanut sugar is accelerated; the more syrup is added, the more significant the delay effect on peanut sugar oxidation; under the same temperature and humidity conditions, the fat oxidation degree of the sample packaged by independent film is significantly lower than that of boxed samples;
