Lee Teng-hui visited Japan nine times after leaving office, and in August 2016, he visited Ishigaki Island in Japan, and was deeply impressed by the flavor, production, sale, and grading system of the local Ishigaki cattle, so after returning to Taiwan, his staff actively planned to introduce Ishigaki cattle genes and breed Taiwan cattle to breed the so-called "Taiwan Wagyu cattle" feasibility.

In the second half of 2016, Lee Teng-hui bought 19 black cattle on the Qingtiangang in Yangmingshan, and after drawing blood and sending them to Japan for testing, it was found that it was really a purebred Wagyu cow left over from the Japanese occupation era, "but ma black hair cattle", which took shape.

Lee Teng-hui bought the 19 beef cattle with Japanese black hair and cattle pedigree in one fell swoop, and set up a breeding base at the leased site of The Shōkyon Zhaofeng Farm in Hualien to breed "Taiwan Wagyu beef" bred by Japanese black hair cattle and other cattle breeds.

In 2017, Lee Teng-hui opened the "Genxingju Biotechnology Company" to cultivate Taiwan Wagyu beef, named it "Genxing Beef" after his former residence in Sanzhi (now New Taipei Freshwater), and issued a bold message: "Within 3 years, We must let Taiwan cattle go public" and "I hope that Taiwanese people will eat Taiwan Wagyu beef that does not lose to Japanese Wagyu beef".

At present, there have been preliminary results in beef cattle breeding, and at the end of 2018, a hybrid cow bred with a dairy cow was successfully born, and about 300 cows were also bred.

Even in 2018, Lee Teng-hui also led the publication of the paper "Analysis of the Genetic Relationship between Taiwan's Cattle Breeds, Black Hairs and Breeds and European and American Breeds by SNP Markers", which was published in the journal "Japan Animal Products Society", the most authoritative academic journal in the Field of Japanese Animal Production, which attracted many Taiwanese and Japanese scholars to express their participation in Taiwan Wagyu research and cooperation.

On 8 February this year, Lee Teng-hui was hospitalized for drinking milk and causing pneumonia. In May, he set up and served as chairman of the "Yuanxingju Biotechnology Company", which he quietly asked Lee to step down as chairman and become a director, and the chairman was taken over by Liu Taiying, vice chairman of the Lee Teng-hui Foundation, who was the original director.

Today, with Lee Teng-hui's illness and death, some green media have lamented "regret" because "Lee Teng-hui's Taiwan and cow dreams are only one mile away."
