Dongwu Mountain is a mountain village in Yinhu Subdistrict, Fuyang, where there were nine temples and thirteen temples in ancient times, and mountain people made tofu skins for monks and nuns to eat. Dongwushan tofu skin is known at home and abroad for its "thin as cicada clothes, light as silk yarn, oily white and pure, delicious taste", known as "gold clothes". Its craftsmanship, especially the "three-mouth style" stunt, has only been taught between fathers and sons and brothers, and has a history of more than 1,300 years.
According to Zhou Guoqing, the boss of Fuyang Guoqing Food Co., Ltd., when the soy milk juice is first wrinkled at the edge of the pot, it is slightly blown along the mouth of the pot, which is a "breeze", so that the skin is initially formed, and then blows the "head mouth wind", a two-foot-long bamboo strip keeps up with the wind, the trend will pick up the skin, gently paste it on the bamboo stick, and then blow the "two mouth wind", with the help of the wind, the bamboo bar is withdrawn, the tofu skin is left on the bamboo stick, and then blow the "three winds", the skin is puffed up, like a fat white fish belly, taking advantage of the situation to scrape off the excess soy milk with the bamboo stalk. Make the skin even and thin, with 160 to 240 sheets per kilogram.
According to legend, when the Tang monks returned from the Western Heavens, the emperor set up a vegetarian banquet to entertain them, and specially sent envoys to Hangzhou to purchase tofu skins produced in Dongwu Mountain, which were listed as tributes during the Southern Song Dynasty and the Ming Dynasty. Dongwushan people also use tofu skin as the main material to make various dishes, such as "dry fried yellow finches", "dragon playing in the water", "Fengfei Nanshan", "family portrait" and so on. At present, there are 9 tofu skin production enterprises with a certain scale in Dongwushan Village, with an annual output of about 1,000 tons, creating well-known brands such as "Dongwushan" and "Dale". Hangzhou Louwailou, Zhiweiguan, Tianxianglou, Su Chunzhai and other "time-honored" tofu skin ingredients have been provided by enterprises in Dongwushan Village.
In order to further enhance the traditional tofu skin industry in Dongwushan and ensure the safety of the broad masses of people, since the beginning of this year, the village has raised 4 million yuan to intercept and collect sewage pipes for the domestic water of farmers, and is currently implementing the interception of sewage pipes for all tofu skin production enterprises in the village. In view of the problem of short shelf life of soy products, we actively promote the process of extending the shelf life of vacuum packaging after high temperature sterilization, and sell them through QS certification. While continuing to hold the Dongwushan Vegetarian Culture Festival, the village intends to build a exhibition hall to show visitors the inheritance history of tofu skin making skills, the heritage culture of the "Nine Temples and Thirteen Temples", the feng shui landscape culture of "dragon flying phoenix dance to Qiantang, lion squatting elephants falling in Dongwu" and the folk culture of "white clouds deep in this Dongwu, Renli Fengqi Naiwu".
