The earliest written record of Pujiang tofu skin is in the late Yuan and early Ming dynasties. In the Qing Dynasty, the Pujiang Folk Dialect Miscellaneous Characters also have traces of tofu skin: "tofu meat clip", that is, a delicacy stuffed with tofu skin wrapped in meat. The "Chronicle of Pujiang County" further clarified the name of this gastronomic dish "Fried Bell", which recorded that during the Republic of China, "Fried Bell" became a major specialty dish of Pujiang, and became famous for a while. All this shows that tofu skin is a traditional specialty of Pujiang, which has a long history of more than hundreds of years.
Pujiang tofu skin is the most famous for the production of Wudalu Village, and the CCTV "Zhifu Jing" column has made a special report on the production and sales of Pujiang tofu skin in the village. At present, there are more than ten Pujiang tofu skin processing bases in the county, such as Liyuan, Sharentou, Zhongcun, Weicun, etc., all of which are processed by using qinghuan sweet mountain springs, traditional folk crafts, combined with modern technology. The Pujiang tofu skin produced is smooth in color, thin as cicada wings, mellow in flavor, and not sticky for a long time. Zhejiang cuisine in the "dry fried yellow finches", "dragon playing water", "Fengfei Nanshan" and other famous dishes, are made of tofu skin as raw materials, especially by guests who do not love greasy, like to eat vegetarian food, known as the "queen" of soy products, products are exported to all over the world. In recent years, a variety of new varieties of tofu skin, such as black sesame seeds, have been issued, and they have developed in the direction of higher nutrition and higher economic value.
According to modern scientific analysis, tofu skin is rich in nutrients, containing 35 - 40% protein, 5 - 20% fat, 25 - 30% of carbohydrates, as well as essential trace elements, vitamins, amino acids, such as iron, calcium, molybdenum, thiamine, riboflavin and so on. It is a gift for the New Year, festivals, visiting relatives and friends, especially in the Pujiang area, pregnant women in pujiang are mainly based on tofu skin and eggs. Because it has the effect of strengthening muscles and bones and restoring vitality. At the same time, it is also a good nutritious food for patients with coronary heart disease, hypertension, diabetes and so on. In 2009, pujiang tofu skin fishing technology was included in the third batch of Zhejiang Provincial Intangible Cultural Heritage Representative List.
