5 eggs, 45 g milk, 20 g sugar osmanthus flowers, 140 g rice flour, white vinegar/lemon juice/tartar powder, sugar
Preparation steps:
Step 1: Separate the eggs. Beat the prepared eggs into a bowl, then beat the egg whites and yolks into two large bowls without water and oil (also with the help of an egg separator).
Step 2: Stir the egg yolks with egg pumps, add 23 grams of corn oil, stir well and add 45 grams of milk, 20 grams of sugar osmanthus and 140 grams of rice flour to form a thick batter.
Step 3: Add a few drops of white vinegar (which can also be lemon juice/tartar powder) to the egg white, add sugar according to the sweetness of your preference, and beat at high speed with the whisk until you pick up the egg beater and there can be curved corners.
Step 4: Dig out half of the beaten egg whites and put them into the yolk batter and mix well, then pour the mixed batter into a bowl containing the egg whites and mix well again.
Step 5: Spread the oil absorbent paper in the bowl (you can also use the cake mold directly), pour the mixed batter in, shake out the bubbles and cover it with plastic wrap, and then use a toothpick to poke a few small holes in the plastic wrap to vent.
Step 6: Add enough water to the pot, put the bowl containing the batter on the pot and steam for 50 minutes, steam it well, take it out and let it cool, remove the mold and then cut it into pieces, and the rice cake will be ready.

1. After the beaten egg white and batter are put together, please use the method of stirring, do not stir, stirring will defoam.
