The ever-growing waters of the Yangtze River have nurtured generations of Bashu people who have cooked delicious dishes from local sources, and the history of Grilled Fish in Wanzhou dates back to the Shang and Zhou Dynasties. According to the "Chronicle of Wanzhou District of Chongqing City" (1910 pages) (Southwest Normal University Press), the ruins of Wanzhou Zhongbazi in the Shang and Zhou Dynasties, located in a group of Tujia Village in Xiaozhou Town, Wanzhou District, excavated a large number of fish bones, charcoal and so on. According to Kao, there were three ways to eat after fishing and hunting at that time: directly grilling with grass and trees; wrapping them in leaves and grilling in the fire; and grilling on bamboo strips. This is the original appearance of Wanzhou grilled fish.

With the evolution of the times, the industrious and simple Wanzhou people injected the history and culture of grilled fish into the taste buds, and "Wanzhou Grilled Fish" was born. Today's Wanzhou grilled fish is one of the local specialties and is a district-level intangible cultural heritage project. At the same time, Wanzhou grilled fish stores have opened to most cities above the county level in the country, and have gone abroad to open stores in the United States, France, Germany, Singapore and other countries.

According to the relevant person in charge of the District Commission of Commerce, as the "hometown of China's grilled fish", Wanzhou needs to have a standardized, professional and refined college, increase the training of technical personnel, use the grilled fish industry to drive employment and entrepreneurship, form an output of one person, drive a piece, and truly meet the talent needs of the whole region and domestic and foreign development of the grilled fish industry. Therefore, Wanzhou Grilled Fish College came into being.

It is reported that Wanzhou Grilled Fish College was prepared in 2018, and in 2021, it was approved by the Wanzhou District Committee to become an additional internal institution of Chongqing Wanzhou Technician College. It is jointly built by Wanzhou Technician College and Huijie Group. Adhering to the purpose of inheriting grilled fish culture, cultivating professional talents, and building the characteristics of the grilled fish industry, with the general idea of "training drives entrepreneurship, entrepreneurship drives industry, and industry drives employment", we will build a national grilled fish training base, a national grilled fish skill level appraisal agency, a national influential grilled fish cooker labor service brand, and a grilled fish industry kitchen management talent transportation base, providing a steady stream of vitality for the development of the grilled fish industry, driving Wanzhou fish, peppers, peppers and other raw and auxiliary materials, seasoning materials, planting and breeding, Prepackaged food and other related industries are booming.

During the interview, the reporter learned that the college has three major functions: education and training, skill appraisal, and innovation and entrepreneurship incubation. In the education and training sector, the college builds a policy system and multi-level talent training system for the development of food processing talents in Wanzhou by creating three special majors: catering service and management, cooking technology and nutrition (grilled fish direction), and marketing (grilled fish industry direction), cultivates high-skilled vocational and technical talents, and carries out the training of grilled fish skills, technology, management and service in the form of combining theory and practice.

In the future, with the acceleration of the development of the grilled fish industry in Wanzhou, the importance of high-quality and high-level talent training with both skills and management will become increasingly prominent, and it is the major mission of Wanzhou Grilled Fish College to promote the same frequency resonance of vocational education and high-quality economic development, and to provide talent support for the development of the grilled fish industry in a systematic, standardized and standardized manner. It is estimated that by 2025, the college will achieve annual training of 2,000 grilled fish skills and 4,000 vocational skills appraisals.
