Phoenix Dan Cong tea is produced in Fenghuang Town, Chaozhou City, Guangdong Province, and is named after Phoenix Mountain. According to legend, at the end of the Southern Song Dynasty, Song Emperor Wei King Zhao Xiang fled south through Wuxi Mountain, thirsty was unbearable, and the mountain people offered red Yin tea soup, and after drinking it, they gave it the name "Song Tea", which was later called "Song Seed". There is also the legend that "the phoenix bird heard that the Song Emperor was thirsty and gave tea with a tea branch", so it is also called "bird's beak tea". During the Tongzhi and Guangxu periods of the Qing Dynasty (1875-1908), in order to improve the quality of tea, people implemented single-plant picking, single-plant tea making, and single-plant sales methods through observation and identification, and isolated and cultivated excellent single plants and named them after trees. At that time, there were more than 10,000 excellent ancient tea trees that were single-plant harvested, so it was called Phoenix Dan Cong tea.

Chaozhou City, located in the eastern part of Guangdong Province, has a tropical maritime climate in South Asia, with a mild climate, abundant rainfall and evergreen seasons. The main tea-producing area of Chaozhou City has the characteristics of mountain high sunshine, short sunshine, clouds and rainfall, winter and spring are not cold, no hot summer weather, diversified vegetation, beautiful mountains and waters, high greening rate and forest coverage, very suitable for the growth of tea plants, tea plant growth has no obvious dormancy period, tea can be produced in all seasons.

The initial picking process of Phoenix Dan Cong tea is a combination of manual or manual and mechanical production. The production process is six processes: sunbathing, drying, greening, finishing, kneading and baking. According to the production process, it can be divided into more than 80 strains of ten models such as cinnamon, yellow branch, and honey orchid.
