The report analyzes the major events, industry data, hot pot industry rankings, category observations, and development trends in 2021.

According to the report data, the revenue of China's catering market reached 4,689.5 billion yuan in 2021, up 18.6% year-on-year, basically returning to pre-epidemic levels. In 2022, the size of China's hot pot market is expected to exceed 1,000 billion yuan, and it is expected to be close to 1,300 billion yuan by 2025.

As of the first half of 2021, China's hot pot chain rate was 27.4%; of which the Sichuan-style hot pot chain rate was higher than the average, reaching 31.5%, and the Cantonese hot pot was only 22.3%.

From the perspective of the number of stores, Sichuan-Chongqing hot pot restaurants have the largest number, accounting for 40.0% of the stores, Beipai hot pot accounts for 14.0%, and Cantonese hot pot accounts for 11.8%.

From the perspective of per capita consumption, the per capita consumption of hot pot in first-tier cities is as high as 94.0 yuan, which is much higher than that of other cities; the per capita consumption of hot pot in new first-tier cities and second-tier cities is relatively close; the per capita consumption of hot pot in other cities is less than 60 yuan.

From the perspective of customer unit price, hot pot below 90 yuan is the mainstream; 12.6% of hot pot shops have a unit price of between 90-120 yuan; and "high-end" hot pot shops with a unit price of more than 120 yuan account for 4.5%.

The report shows that as of the end of December 2021, there were 395,000 hot pot enterprises in the country, of which Sichuan was the most, accounting for 12.4%; the number of hot pot enterprises in top 5 provinces accounted for 40% of the country.

The number of hot pot stores in Chongqing exceeded 30,000, ranking first in the country and becoming the city with the highest concentration of hot pot stores; in second place is Chengdu, with 24,000 stores; in addition, the number of hot pot stores in Beijing and Xi'an also exceeded 10,000.

Among the ten hot pot brands with the largest number of stores, Sichuan-Chongqing hot pot occupies eight seats and is the absolute main force; although Chaoshan beef hot pot is quite popular in Guangzhou and other places, the number of stores is still relatively small.

Judging from the poor scoring cloth of high-end hot pot, the proportion of service is the highest, close to 40%; nearly 15% of the bad reviews are related to the price; and the proportion of bad reviews for high-end hot pot ingredients is 6.5%. As far as the status quo is concerned, mid-range and high-end hot pot is still based on exploration, rather than the main direction.

According to the report, the most popular Sichuan-Chongqing hot pot dishes are hairy belly, shrimp slippery and duck blood ranked among the top three. Hot pot brand satisfaction: Banu, Haidilao, Zhou Shishi, Xiang Xiang, Xiaolongkan ranked in the top five.

In the hot pot consumption scene, dinner and dinner are the main consumption scenarios.
