"Light Cake", also known as "Jiguang Cake", "Navel Cake", "Salty Light Cake", was a generation in Ningde, Fujian Province, which lasted for hundreds of years.
In memory, when I was a child, when I was a grave sweeper, people would distribute "light cakes", this custom has a long history, Xiao Ai only knows what it is, but does not know why.
Taiwan Province has a city god festival every May, and Xiao Ai seems to be able to see it again. According to reports, in this folk activity in Taiwan Province, "light cakes" will also appear in the parade, and they will distribute them to children to bless them to grow up safely.
Probably the Ningde people sweeping the grave and distributing light cakes are also begging for an auspicious bar.

light cake - related to Qi Jiguang?

< h1 class= "pgc-h-arrow-right" > the history of light cakes, starting from Qi Jiguang Anti-Wu.

According to relevant records: In the forty-second year of Ming Jiajing (1563), Qi Jiguang led an army into Fujian to pursue and annihilate Wukou. Unfortunately, in the event of rain for several days, the army could not open a gang. Qi Jiguang then ordered the baking of a simple kind of small cake, which was skewered with hemp rope and hung on the soldiers as dry food. Later, this small cake flowed into the folk and was not only widely eaten, but also became an indispensable offering to the ancestors of the gods. Later generations remembered Qi Gong and called this small cake "Jiguang Cake". This name is still maintained in NingdeFu'an and other places.
There is also a saying that It is said that Qi Jiguang led soldiers to hunt down and kill Wu Kou, and gui used his troops quickly, but in the process of marching, setting up a pot to cook rice delayed a lot of time, and Qi Jiguang could not think of other good ideas. Once, when the march reached the east gate of Longshan in Cixi, an old farmer offered the Qi family army many salty cakes with small holes in the middle and sesame seeds as a consolation, and said to Qi Jiguang that this cake was shiny, and it was worn with a rope and carried around, and when hungry, it could be filled with hunger. After the news spread, people from all over the coast rushed to make "light cakes" for the army. The name "Light Cake" has since spread. Because of his meritorious service in helping the Qi family's army, it is said that the Jiajing Emperor gave him the name "Jiguang Cake". Also because the cake is slightly salty, it is also called "salty light cake".
According to another theory, after Qi Jiguang liberated the people who were imprisoned by the Wokou, he distributed his own dry food to the people to fill their hunger. So the people called it "Jiguang Cake".

light cake - Chinese "hamburger"?

The shadow of the sword and light sword of that year has become a kind of rusty memory, scattered in the folk Jiguang cake, its appearance, taste, production process, etc., in southern Zhejiang Pucheng, Fujian Ningde, Fu'an and other places are basically the same, and "salty light cake", a "salty" word, a "light" word, has perfectly interpreted the soul of light cake.
Light cake, the raw material is mainly flour, accompanied by salt, sesame seeds (some areas do not), kneaded evenly into a flat round, bowl size, with a small hole in the middle. The cake blanks are charcoal-fired and have a smooth outer surface and a silky inner layer, slightly salty and very tasty.
It is said that "light cake" existed before the founding of Puzhuangso Castle (in 1387) in Puzhuangsuo Castle (in the pucheng community of Mazhan Town, Cangnan County). If you count it this way, it's been 600 years.
According to the account on the "Cangnan County Literature and History Materials" (the twentieth series), Cangnan Jinxiang also has this folk custom, the raw materials are also mainly flour, kneaded, made of brown sugar, round, with small holes in the middle, can be worn into a string, easy for the Qi family army to carry and eat.
Jinxiang people call it "belly button cake". However, Pucheng, which is also in Cangnan and the same place of resistance to the Wu, has never had such a title. It is said that in Taizhou and Yiwu, there is the same name.
The elderly old man recalled that in the past, "light cake" also had a way of eating called "tiger pig", which cut the "light cake" into half halves, built in cooked pork head meat, and added a few drops of soy sauce. It is said that this way of eating was generally enjoyed by rich local families in the past.
Seeing this, did mcDonald's and KFC's hamburgers come to mind? Perhaps, these FMCG foods in foreign countries imitate this shape?

light cake – eat a new trick

"Light cake" in Ningde's local food method can be described as a variety of tricks, the local people will put the "light cake" in the water to soak and swell, and then cut it into pieces, and then cook it with mustard stalks, meat slices and so on. It is said that this is also a famous local dish. This way of eating is still going on today.
Sauerkraut light cake, is also a delicious dish in many small stir-fry shops in Ningde, crispy light cake coat, a bite down, inside is the aroma of sauerkraut and flour, it is simply amazing.
Ningde folk, there is a saying that light cake nourishes the stomach, although there is no medical certificate, but there is still a certain reason——— for people with stomach diseases, eating less and eating more meals is also a therapy, and "light cake" is just the perfect choice of "eating less and eating more meals", the cake is not large, healthy and durable.
Ningde's production of light cakes is uninterrupted all year round, reaching its peak before the Qingming Festival, because when the locals visit the tombs of their ancestors during the Qingming Festival, almost every family has to bring one or two hundred jiguang cakes for distribution to children or adults who come to ask for tomb cakes.

light cake - enigmatic life

Jinxiang and Pucheng in southern Zhejiang were also the forefront of the anti-Wu resistance in the Ming Dynasty. But in these places, the name of this kind of cake is different today, some are called "belly button cake", some are called "salty light cake", and Ningde Fu'an is closer to the historical original, called "jiguang cake".
It is understood that the cake oven for making this kind of cake is made of a cylinder, which is not much different from the daily water tank, but the mouth of the water tank is much larger, and the caliber of the cylinder used to make the cake oven is smaller; the second is that the water tank has a bottom, and the cylinder of the cake oven is bottomless.
The vat of the cake oven is placed in a bottomless wooden barrel, and then filled between the cylinders with loess and salt, so that the cylinder does not crack after heating. After the flour is fermented, it is cut into pieces, kneaded into strips, then picked into small dough, flattened and rounded by a grenade-like tool called the "cake stick", and then pressed a hole in the middle of the cake blank with the handle of the "cake stick". Once made, the blanks are baked in the oven at the right time.
Where did this method of making cakes originate? Was it really introduced from Fu'an to southern Zhejiang? It is also impossible to verify.
Mr. Huang Guijin, chairman of the Huang Clan Ancestral Hall of The Jiangxia Clan of Chayang (which is a cultural security unit of Fujian Province), explained this way: Huang Jun, the head of Fu'an Yang, after being raised in the sixteenth year of Jiajing (1537), served as the Tongzhi of Wenzhou Prefecture (the adjutant of the prefect and the prefecture during the Ming and Qing dynasties, who was in charge of supervising grain, hunting, coastal defense, river defense, water conservancy, etc., and was stationed in designated places ———Substanding the Cihai"), this person "tended to be high-minded and knowledgeable... When the Wokou invaded, he urgently led the people to fight in the "watershed area at the junction of Zhejiang and Fujian, and later, he "has struggled to break the thief, and died of widowhood."
Based on this, Huang Guijin deduced that the production process of "Jiguang Cake" in southern Zhejiang was spread by Huang Jun.
He also said that until the liberation, Fu'an Yangtou was also a distribution center for materials in Shouning, Xiapu and other places in Fujian Province and Taishun in Wenzhou City, and it was very prosperous at that time, and local cake makers were often invited to go out to spread their arts.
According to the "Plan for the Protection of Cultural Relics of Puzhuangsuo City" (formulated in June 1999), there is the following account: In the seventeenth year of Ming Hongwu, Tang He, the Duke of Xinguo, was appointed to build the national anti-Wu city wall. In the nineteenth year of Ming Jiajing (1540), the capital of Zhejiang commanded Li Jun to lead an army to garrison Puzhuang for several months. According to legend, in the forty-first year of Jiajing (1562), the anti-Wu hero Qi Jiguang led thousands of Qi family troops to pursue and suppress wukou through Pumen. According to the relevant historical records of Wenzhou, in March and April of the forty-second year of Jiajing (1563), Zhao Bingran, the governor of Zhejiang, commanded Yan Jifang in the capital of Tongdu, and led the general Hu Zhen to lead the warships to cooperate with Yu Dayu and Qi Jiguang, and they would suppress more than 70 Fujian Wokou ships, behead hundreds of ranks, and rescue more than 100 captive women.
There are relevant historical records in Fuzhou, which can also prove that Qi Jiguang entered Fujian long after the time of Huang Julaiwen.
It seems that the historical truth about this paragraph about the "jiguang cake" can only be left to the archaeological or historical circles to solve.
