What is a nine-belly fish? When I saw its true face of Lushan, I learned that as a Taizhou native rich in seafood, I had eaten it for nearly fifty years. This is the most common fish in the seafood of coastal Taizhou people, and it is the fish that is served on the table of every household almost every day.

Not long ago, I walked around the Nanjing Road Pedestrian Street in Shanghai with my wife, and stopped by to eat on the second floor of a shopping mall. According to the menu order, I saw that the menu had fried nine-belly fish, I thought it was very fresh, did not eat it, I ordered one. When it is served, the starch wrapped outside is fried and golden brown. My wife and I both picked up a piece, and I swallowed it, bit it a few times, swallowed it, and didn't taste anything. The wife took a bite, looked at the remaining half and said, "Isn't the fish in it watery?" "I picked up another piece of bite open to look closely, it was really watery!"

Most days, we eat very salty, dried water, commonly known as "dragon head roast", it is said that Shanghainese people also call it. Salty tap roasts are usually steamed on a rice cooker because they are too salty, so they are dipped in vinegar to dilute the salty taste. Nowadays, as long as it is not a fishing ban period, you can buy fresh water every day, and the most common way to eat fresh water is braised, or water gurgling pickle soup, water babbling tofu soup, are extremely delicious.

Eating fish is most afraid of being stuck by the fish bones, the water is not only tender flesh, but also only a vertebrae, no other fine thorns, side thorns. Whether adults, children, whether they will eat fish or not, once inhaled, the water babble meat is the belly, spit out the fish bone, do not have to worry about the fish bone stuck throat, this is one of the reasons why the water is loved by people.

Whenever there are guests from other places or far away, pointing to the boiled water on the table and asking the name of this fish, I can only tell them that we Taizhou people call it "Water Babbling", or tell them that the Shanghainese call it "Dragon Head Fish" and "Tofu Fish", we really don't know the scientific name of Shui Gu.

Why do Taizhou people call this fish "water babbling"? The water character is very easy to understand, the fish are aquatic products, and the water babbling this fish is particularly watery, it looks watery. Gurgling, not the babbling of the babbling water, is the abbreviation of "soft babbling" and "soft" in the Taizhou dialect. The Taizhou dialect "soft" refers to the meaning of overwork, weakness and weakness.
