When Lei Duanzao was middle-aged, through the mediation of neighbors, he married the daughter of the Zhu family. After Zhu Shi married into the Lei family, she not only managed the housework diligently and frugally, operated the business flexibly and well, but also lived in harmony with the neighbors, so people respected her as "Lei Sanniang".

After returning home, in order to make the business bigger, Lei Sanniang carried out a lot of work on the basis of the tofu she made. One is to choose pure soybeans to soak well, fine grinding and refining the pulp; the second is to pay attention to the heat when boiling water, and the "plasma" is used in the fermented sour soup, which is the tofu tender and white; the third is that the water that has been made into tofu must be fully squeezed out to avoid the sour and bitter taste of the tofu; the fourth is to add tofu to a certain amount of peppercorns, star anise, fennel, cinnamon, grass fruits, naphtha, salt, chives and other condiments, after repeated kneading, stirring, and then kneaded into rounds, put into the pot and fried. The shell of the fried rounds is brown and yellow and crispy, and the inner layer is covered with large and small "honeycombs", and the color and aroma are attractive when served on the table. When eating, it is eaten with soy sauce, paprika, sesame oil, pepper, green onion, garlic paste, wild bitter garlic, folded ear root and other preparations of dipping water, which is really fragrant, delicious, crisp and tender.
