Debunking: Is restored milk fake milk? What is a restorative milk? Is the nutrient loss of restorative milk serious? Precautions for choosing dairy products Dr. Ma Guansheng

author:Peking University professor talks about nutrition

Recently, the recovery milk has been pushed to the cusp of the storm, some media said that the recovery milk "nutrient loss is serious", is "fake milk" and "gutter oil in milk", which makes consumers very worried, "My baby will not always drink restored milk, right? "Ah, I've been drinking restorative milk, which is equivalent to drinking it for free, isn't it?" ...... In fact, restored milk is not a "no nutrition" of the inferior life, not to mention "fake milk", as long as the standard production, standardized labeling, consumers can rest assured to buy and eat.

Restored milk, also known as "reduced milk" or "reduced milk", is the concentration and processing of milk into concentrated milk or milk powder, and then add an appropriate amount of water, diluted into a lotion equivalent to the proportion of fresh raw milk water and solid substances.

In layman's terms, reconstituted milk is milk made by reducing milk powder with a certain proportion of water. There are two ways to process it: one is to mix different proportions of milk powder into fresh milk; the other is to mix milk powder with water as raw material.

China's national standards stipulate that kefir, sterilized milk and other dairy products can use recombined milk as raw materials, but pasteurized milk cannot use reconstituted milk as raw materials.

That is to say, pure milk sold in supermarket freezers cannot be used as raw materials for milk powder; while ambient milk, yogurt, and various concocted milk can be used as raw materials for milk powder. At the same time, the standard also stipulates that products with reconstituted milk as raw materials should be marked with the words "reconstituted milk", and the raw materials and proportions contained in the reconstituted milk or milk powder should be truthfully indicated in the product ingredients.

Therefore, restored milk is a dairy product that is allowed to be produced. Of course, there is also a need to exist, because many areas of our country lack fresh milk sources, and can only rely on restored milk to make up for it.

Then some people may ask, why not use fresh milk as a raw material? Because compared with fresh milk, milk powder does not need cold chain preservation, easy to transport and store, which is more conducive to reducing production costs. This explains why "restored milk yogurt" in supermarkets is generally cheaper than "raw milk yogurt".

The milk undergoes a high temperature sterilization during the concentrated drying process, and another high temperature sterilization after the washing. Since the restorative milk has undergone two high temperature treatments, people's biggest concern is that "the high temperature destroys the nutrient content and leads to a serious loss of nutrients.". In fact, the nutritional value of restored milk is not lost much.

First of all, the main advantage of dairy products is the supply of calcium and quality protein. Calcium as an inorganic salt, heating will not affect its content. Some people may say that after heating protein will degenerate, in fact, even if it is not heated, the protein we eat must be digested and decomposed into amino acids before it can be absorbed and utilized by the human body, so heat denaturation will not only not reduce its nutritional value, but also help digestion and absorption.

Second, heating does cause the recovery milk to lose some vitamins, but to a much smaller extent than we thought. And relative to human demand, dairy products are not a good source of vitamins, the content is already low.

Therefore, restored milk is not an "inferior product", nor is it a poor product without nutrition, nor is it a "fake milk".

Restored milk, pasteurized milk and room temperature milk differ in terms of nutrient content, but the difference is not large, pay attention to the following points when purchasing:

· Choose products produced by reputable and regular dairy companies.

· Pay attention to the product packaging identification, production date and shelf life.

· If you find that the product has a swelling phenomenon, do not buy or drink.

· Choose according to your health. If the weight is normal, you can choose full milk; lactose intolerant people are suitable for yogurt or lactose-free milk; high blood pressure, hyperlipidemia, diabetes, obesity is suitable for low-fat or skimmed milk.
