The art of making tortillas was passed down in the late Ming and early Qing dynasties, mainly distributed in the area of Grandmakeng Village, Jingling Town, Xinchang County.
Tortillas are made by air-drying milled flour with corn kernels, water and dough, rich in flavor with condiments according to personal preference, and then pressed to make shapes. With the passage of time, the villagers of Grandma Keng Village have continuously improved their tortilla making skills, the taste is more diverse, there are tomato flavors, seaweed flavors, etc., the style is more beautiful, the butterflies have become thin as cicada wings, golden in color, delicious and crispy seasonal food, emitting a strong grain fragrance, deeply loved by tourists.
Tortillas are handmade farmhouse delicacies. Steamed corn flour, kneading dough, making cake embryos, flaming cakes, drying cakes, fried cakes, etc. each needs to be completed by hand, according to the season, weather, and the water absorption of different batches of corn flour, the maker needs to flexibly grasp the proportion of water temperature, water and flour.
Taco is not only delicious, the nutritional value is extremely high, containing lecithin, linoleic acid, grain alcohol, vitamin E, fiber, etc., with blood pressure, blood lipids, anti-arteriosclerosis and other health care effects, lutein and zeaxanthin can also play a role in protecting the eyes. Eating tortillas has a strong feeling of fullness, but the calorie content is very low, and it also helps to lose weight and fat.
Jingling Town is a thousand-year-old town, and the technology of making corn cakes has been popular in the countryside since the Ming and Qing dynasties, and the area is mainly in the area of Grandma Keng Village in Jingling Town.
Grandma Keng Village is located in Jingling Town, Xinchang County, at the source of the Chengtan River, at the junction of Xinchang, Dongyang, Shengzhou and Pan'an counties. There are 13 ethnic groups such as Han, Miao, Dai and Bai, and is known as the "First Village of Jiangnan Nationalities". There are simple and tidy villages, winding and winding paths, babbling streams, towering cuifeng on both sides; there are well-preserved ancient taimen, stone walls, yellow mud walls and other quaint buildings; there are also the remains of a certain unit of the Red Army Advancing Division passing through Grandma Keng Village and the former site of the Shengxindong Guerrilla Base, which is the second batch of intangible cultural heritage tourist attractions in Zhejiang Province, and has fourteen national honors such as "National Civilized Village".
With the rise of rural tourism in Grandma Keng Village, tortillas are loved by tourists, becoming an important carrier for villagers to increase their income and become rich, and have also become a food business card. Even under the pressure of the epidemic this year, the number of tourists in Grandma Keng Village still reached 200,000 person-times, and the corn cake industry alone has driven farmers to increase their income by more than 8 million, in addition to tea and tourism and other related incomes, the per capita income of Grandma Keng Village has also increased from 86 yuan in the 1990s to 45,000 yuan today.
In 2019, the corn cake was selected for the Zhejiang Eastern Tianmu Tang Poetry Banquet, named "Full of Golden Armor", because of the successful launch of the Zhejiang Eastern Tianmu Tang Poetry Banquet, Xinchang County won the "Poetry Painting Zhejiang • Hundred Counties Thousand Bowls" project demonstration county.
On October 27, 2020, the tortilla making technique was included in the recommended items of the eighth batch of intangible cultural heritage list in Xinchang County.
