Pick a fresh yellow peach that is slightly harder
Peel and pitt and place in a container
Place 8 to 10 rock sugars
Steam over high heat until the rock sugar is completely melted (about 15min)

Drain the broth (about 50-70g)

Add the sugar and lemon juice
Heat again to around 85 degrees Celsius and turn off the heat
Add the ice powder and stir quickly until the ice powder is completely melted
