ingredient:
English milk sauce: 1 egg yolk, 15 grams of caster sugar, 85 grams of milk.
Others: Matcha powder 6 g, milk 18 g, light cream 80 g, white chocolate 35 g.
method:
1. Pour the egg yolks and caster sugar into the egg bowl and whisk until slightly white.
2. Pour the milk into a small milk pot and bring to a boil over low heat.
3. Then slowly pour into the egg yolk basin and stir while pouring to prevent clumping.
4. Then pour the yolk liquid back into the pot, simmer over low heat until thick, stir diligently while cooking, the process of scraper constantly stirring from the bottom, do not leave dead corners. (Thermometer monitors to about 82 °C)
5. Sift off the heat.
6. After the white chocolate melts, add matcha powder and mix well.
7. Mix matcha white with English milk sauce.
8. Pour in the remaining light cream and milk and mix well again.
9. Sift again and pour into the BRUNO ice cream machine to open the "mellow" gear.
10. The made matcha ice cream is soft and can be eaten directly, or it can be put into a mold and frozen.
