KFC's original New Orleans Grilled Wings has always been the white moonlight of my childhood, and I still remember it.
Later, although KFC reproduced this product, I always felt that the taste was not the same as before. The slightly salty, sweet, and spicy taste has been hidden in the depths of my taste buds, hoping to be excavated again one day.

Orleans grilled wings
Later, when I came to live in the United States, I found that there were no New Orleans roast chicken wings in KFC here, which was simply disappointing. Witty as I was, I decided to simply go to New Orleans, Louisiana, the city "named" by chicken wings, which must be the OG cannon of the grilled wing world.
As you probably guessed, New Orleans, the food capital, everything was perfect except for the absence of roast chicken wings.

Taste of New Orleans
/ Kajin Flavor is the protagonist /
A true Taste of New Orleans, the C bit definitely belongs to the Cajun flavor.
As a special cuisine in the southern United States, it was first brought into Louisiana by French immigrants. This rugged and affordable French country style taste is carried forward locally, and gradually formed a czarn flavor characterized by spicy, spiced and heavy taste. Crayfish, crocodile meat, frog legs... A variety of ingredients that people in other parts of the United States are too frightened to touch when they hear the name, and they have become specialties with the blessing of Kazhen.
Cachant flavored crayfish
In fact, it is difficult to summarize in a simple sentence what the flavor of cajun is like, and if you look at the composition of its soul "cajun seasoning powder", you can feel how complex it is: (very many) red pepper powder, black pepper powder, ginger powder, onion powder, bay leaf crumbles, cloves, thyme, oregano powder, dried dill, mustard powder, garlic powder, kosher salt, coriander seed powder, parsley crushed, lemon pepper... Almost every one of them is a heavyweight player who can bring a rich fragrance.
The composition of ka real powder is very rich
So many spice masters in a pot, there is no chaotic taste melee, but surprisingly harmonious and friendly, composing a delicious song with great personality.

New Orleans is more than just Kazen
/ Assorted Rice, Soul Food /
New Orleans' Kazhen flavor can be too widely used, what Kazhen Crayfish Rice Bowl, Kazhen Baked Seasonal Vegetables, Kazhen Grilled Oysters, Kazhen Fried Chicken ... But probably the most popular is the famous Cajun Seafood Smorgasbord.
It's a stew. Stir-fry the minced garlic butter until fragrant, then add water to the seafood such as mussels, clams, crayfish, prawns, and snow crab legs into a large pot, accompanied by sausages, potato pieces and corn segments, and simmer with water. Of course, there is always a red kazhen seasoning powder, do not add money like a big hand, while simmering and stirring, so that the ingredients are thoroughly flavored.
The red card real powder puts a lot
By the time the soup was almost finished, the aroma of Kazhen had already spread. Diners gathered around the table, pouring all kinds of delicious food directly into the large bucket on the table, or simply using a simple plastic bag, steaming hot, bright color, and fragrant.
When eating seafood smorgasbord, you will not use knives and forks to be elegant, and everyone can't wait to go straight to fishing.
Heroically peeling off the shrimp shell crab shell, the snow white bouncy flesh inside is displayed in front of the eyes, holding back the saliva and then dipping it in the thick soup, the entrance is sour and spicy, mixed with a variety of unspeakable rich taste, a wonderful taste song and dance, completely making people "tongue" overwhelmed.
In contrast, New Orleans' other traditional signature food, Jambalaya, is much gentler and inexplicably fits the "Chinese stomach." That's right, the one in carpenter's song.
Jambalaya
This dish is a bit like paella in form, with a variety of sausages, seafood and vegetables. Sausages usually use smoky varieties such as French garlic spicy sausages called Andouille; seafood is most commonly used for shelled crayfish meat, shrimp balls or small oysters; while vegetables have fixed three musketeers, onions, celery and green lantern peppers.
The recipe is similar to risotto, where the accessories are simmered thoroughly, then the rice, Creole and the pre-boiled soup are added and slow-cooked over low heat until each grain of rice is full of flavor. The Creole seasoning powder used here is very similar to kazen powder, but the spiciness is very small, mainly the flavor of various vanilla, such as oregano, fragrant leaves, nine-layered tower, thyme, rosemary, parsley, etc., so the taste is sweeter and milder. The rice is half-soaked in the sauce, but the right heat makes the rice magically maintain a certain chewiness and texture, which is very mellow and delicious.
Rice that is full of soup
Oh, and because of the large number of Africans, New Orleans' "Soul Food" is also very famous. This traditional Southern African cuisine is dominated by rich fried foods, such as pork chops, fried catfish fillets, fried chicken with waffles, each of which is a large amount of civilian food with rich carb fat, which is worth a try.
This is soul food for all

Domestic "Orleans" chicken wings
/ Probably not related to Orleans /
After eating a large circle of beautiful food in New Orleans, I suddenly had a question: If so, where did the domestic New Orleans roast chicken wings come from?
Some people say, no, no, no, people are actually called "Orleans Grilled Wings", which is a taste from Orleans, France. But the problem is, Orleans, France, does not have any roast chicken wings!
Orleans, France
Orléans is a small city in north-central France and is not known for its cuisine. To be sure, a papaya jam called "Cotignac" is produced locally, made from papayas on the Banks of the Loire, with honey and other spices added to reduce the acidity of papayas and increase their fruitiness and layering. Although the taste is sweet and sour, it is very refreshing, but this is really far from our roast chicken wings.
Papaya jam from Orleans
Some people also say that New Orleans grilled wings are actually close relatives of Turkish barbecue Kebab, but I always feel that the taste of the two is very different, and 80% is just a misinformation (by the way, the so-called "Turkish barbecue" common in China is actually a Chinese version of Turkish barbecue based on the Shawarma barbecue in the Middle East... )。
kebab
Thinking about it, I finally admitted that "New Orleans Grilled Wings" was probably an original creation of Chinese, just like there is no wife in the wife cake, Japanese Tianjin rice is not Tianjin at all, and Hainan chicken rice is not much Hainan. But does this affect us eating grilled wings, eating cajun, eating risotto, eating fried fish, eating jam?
No, no, no, it doesn't matter where it comes from, good food is the only truth of the foodie class.
I've forgotten about chicken wings and now I just want to eat crayfish...
