Cold powder crucian carp

Ingredients: crucian carp, cold powder, hair celery, tempeh, ginger, red pepper, oil, salt, cooking wine, chicken essence, chili oil, pepper, vinegar, soy sauce
method:
1, scrape the crucian carp to scale the gills, remove the internal organs, wash it, put the appropriate amount of salt, cooking wine, ginger, green onion mix well and marinate for 30 minutes;
2: Wash and cut celery into small cubes and chop the tempeh. Cut the shallots into green onions, red peppers into rings, and ginger into strips. Cut the cold powder into cubes or strips and set aside;
3: Marinated crucian carp, put green onion and ginger in the belly, steam for 15 minutes until cooked;
4: Heat the oil with an appropriate amount of oil, put the tempeh and stir-fry until fragrant. Mix soy sauce, crushed tempeh, chicken essence, green onion, chili oil, red pepper, diced celery, pepper, vinegar and sesame oil into a sauce.
5: Pour the mixture into a bowl filled with cold powder and mix well. Remove the crucian carp and place it in the fish dish, and pour the mixed cold powder on the fish.
