In Hanzhong, Shaanxi, there is a local specialty snack, Hanzhong noodles, which can also be called "Hanzhong rice peel" because it is steamed for rice milk.
How is it made?
First of all, the rice is soaked in a bucket the night before, and when you get up at four or five o'clock in the morning the next day, you will use a high-power soy milk machine to beat it into rice milk, and then add a certain proportion of water to the rice milk, so that the rice milk for steaming the dough skin is ready.
Of course, some shops in order to taste strong and distinctive, they will add edible glue and red flour to the rice milk, so that the color of the steamed dough is not pure white, but black, referred to as "black dough".
The finished rice milk is steamed. Spread a steaming cloth in the steaming basket, then pour the rice milk evenly on the steaming cloth, roll it into a thin layer, cover it, and steam it for five minutes on high heat to cook.

Peel off the steamed dough from the steaming cloth, spread it flat on the board, brush the surface with oil, cut it into strips with a knife, put it in a bowl, mix it with bean sprouts, pour seasoning sauce, chili oil, monosodium glutamate, salt, and taste it in a bowl of hot, fragrant dough.
In order to eat more comfortably, the locals also eat a bowl of porridge when eating the dough. There are more types of porridge: vegetable tofu, peanut pulp, polenta, pulp and water soup... Which kind of porridge to choose depends on the preferences of the eater.
How was the dough skin invented? The locals can't tell, but there is such a legend.
It is said that during the Warring States period, the local Qin soldiers ate military food as batter, similar to paste. Because of the sudden military situation, the soldiers could not afford to eat, so they had to wave the batter in the bowl on bamboo baskets, dustpans and other objects.
After the Qin army left, some local people picked up these pieces of noodles and went home, poured spices and ate them, which felt good. Inspired, he invented the dough.
Of course, this is just a legend, and the authenticity cannot be verified.
I remember when I first came to Hanzhong, I found out how early in the morning everyone had a bowl of "noodles"? It felt incredible. Later, after being introduced by local colleagues, I learned that it was originally dough, and the locals had to eat breakfast every morning. At that time, a bowl of noodles was only one dollar, and now it has risen to four or five yuan. Even so, the Hanzhong people still can't help but have this mouthful.
