Lettuce is a national level II key protected wild aquatic plant. The young leaves and young stems of lettuce contain a kind of gelatinous mucus, which has a delicate and smooth, cool and delicious feeling when eaten, and has a refreshing fragrance, with a good taste and unique flavor. Lettuce is easy to eat, can be fried with meat, can be vegetarian, can be soup, can also be made into filling. Lettuce has very high ecological value, economic value and scientific research value, but at present, due to changes in the ecological environment and the interference of human economic activities, the number of wild lettuce is getting smaller and smaller. In 2015, a patch of wild lettuce was found in Xiyuan Village, Longhu Mountain Scenic Area. In order to effectively protect the wild lettuce resources in Jiangxi Province, further develop and utilize the excellent seed source of lettuce, promote the development of the aquatic vegetable -- lettuce industry in Jiangxi Province, and drive farmers to increase their income and become rich, the first wild lettuce industry research base in Jiangxi Province was established in Longhushan in 2000.
