Baking soda 2 g
White Sugar 75

1. Make the filling. Wash and pit the dates, place them in a pressure cooker, add water pressure for 15 minutes and remove.
2. Pound the pressed dates with a spoon and beat into a paste in a blender.
3. Sauté the date paste in a non-stick pan over medium-low heat for about an hour until all the water is drained (no oil, dry fry).
4. The finished product is as shown in the picture. Due to the sweetness of dates, there is no need to add sugar.
5. Make the dough. Mix the sugar, butter, and lard together and knead it by hand. (before kneading)
6. After kneading, it is a purple drop of sauce!
7. After mixing flour + baking soda, stir well, then add an egg and noodles.
8. Add the mixture of freshly kneaded sugar, lard and butter into the flour and use the dough method. No water is required during this period.
9. Roll the reconciled dough into long strips and roll into 30 grams.
10. Knead the sautéed date paste into 20-25 grams of each agent and set aside.
11. Knead the dough into a bowl by hand and wrap it in the date paste filling.
12. Wrap and knead into smooth balls.
13. Preheat oven for 10 minutes. Spread the baking sheet with tin foil and add the kneaded dough. Top with two layers of egg yolk liquid, sprinkle with black sesame seeds and place in the oven.
14. Heat at 180 degrees, heat at 200 degrees, bake for 20 minutes!

You need to melt two kinds of oil with the temperature of your own hand, and then rub the sugar with the two oils that have melted. If the sugar is not kneaded, then the reconciled dough will be very dry. Step (8) is to use the "overlapping surface method" when merging with faces. At the beginning of the dough you may feel a little dry, don't worry, don't knead the dough in circles. Instead, it is like folding a quilt, and the dough is "folded and kneaded". Because the authentic nectar puff pastry must be cracked after baking, this is done so that the dough can finally crack and the puff pastry tastes better. If the dough is kneaded excessively like normal noodles, the finished product will be too large to crack. In addition, the traditional nectar is stuffed with bean paste. However, when stir-frying bean paste filling, a lot of white sugar should be added, in order to control the intake of sugar, I chose the big red dates that do not need to add sugar and can replenish qi and blood, and decisively replaced the bean paste filling with date paste filling.
