Potato goulash

Ingredients: 300 grams of potatoes, 400 grams of beef, 50 grams of onions, 7 grams of oil, broth, cooking wine, fine salt.
method:
1: Wash and peel the potatoes, cut into hob pieces, wash the beef, cut into small cubes, blanch them with boiling water, drain and set aside, cut the onion into strips.
2: Heat the pot on the fire, pour in the oil, then add the beef nuggets and stir-fry, after the surface of the meat is waterless, add cooking wine, broth, fine salt, boil on high heat and then cook over low heat.
3: After the beef is ripe, put in the potatoes and cook it.
Braised pork ribs
Ingredients: ribs, rock sugar, oil, chives, ginger slices, cinnamon, star anise, fine salt, soy sauce, flower carving wine.
1: Bring water to a boil in a pot, add chopped ribs and blanch until the water bleeds, scoop up and wash, drain the water and set aside.
2: Cook 1 tbsp oil in a pan over low heat until dark brown sugar, add ribs and sauté until evenly colored.
3: Fill the pot with water (the amount of water is just over the ribs) and add all the seasonings.
4: After bringing to a boil on high heat, transfer the ribs and soup to a deep pot, cover and simmer for 60 minutes.
5: Cook until about 1/3 of the water is left, remove the cinnamon, ginger slices, chives and star anise.
6: Continue to cook until the ribs can be easily inserted with chopsticks, turn the heat to collect the juice, and cook the soup until it is viscous.
Braised appetizer shrimp
Ingredients: black tiger shrimp, spicy tempeh, green onion, garlic, ginger, soy sauce, vinegar, sugar, salt, oil.
1: Cut the back of the black tiger shrimp, pick off the sand line, rinse well, pat the garlic and chop it, chop the green onion, and chop the ginger.
2: Mix a bowl of sauce: soy sauce, vinegar, sugar, salt, and an appropriate amount of cold water and stir well.
3: Pour a little oil into the wok, sauté the green onion, ginger and garlic to make it fragrant, pour the open-back shrimp into the pot, stir-fry on high heat to turn red.
4: Pour the bowl juice into the pot, so that the shrimp are soaked in the soup, fully flavored, about two minutes can be out of the pot, and finally sprinkle a little green onion.
Steamed fish with garlic
Ingredients: fresh fish, garlic, rice wine, steamed fish soy sauce, sesame oil, ginger, chili pepper, shallots.
1: Wash and dry the fish, cut the fish body 2 to 3 knives, cut the garlic in half, slice the ginger in half and cut into strips, cut the green onion into pieces and shreds, and cut the pepper into strips.
2: Place the ginger slices on the plate, then put the fish on top, 1 tbsp of steamed fish soy sauce and 2 tsp of rice wine evenly drizzle on the fish body.
3: Place the minced garlic, ginger slices and green onion on the fish, and put the remaining garlic next to it.
4: Raise a pot of water, roll the prepared fish and steam for about 7 minutes on high heat to extinguish the heat.
5: Keep the minced garlic, but take out the ginger slices and green onion, pour 1 tbsp of steamed fish soy sauce evenly on the fish body, put on the chili pepper shreds, ginger shreds, green onion strips, drizzle with 1 tbsp sesame oil, put it back into the pot, steam on high heat for about 3 to 4 minutes.
