The poet Guo Shunmin wrote a history of "just burning hard" for four or five hundred years. This five-word poem is about Shouguang's famous noodle snack, the bar head.
The bar head is also called the sign bun, commonly known as the small Shandong pot cake. It is a characteristic traditional noodle dish that originated in the Wanggao area of Shouguang City, Shandong Province.
It is a kind of white-sided fire, slightly larger than the size of a palm, and there is a layer of golden crispy skin on the outside, and under the golden hard skin, there is a soft "heart" hidden, emitting a seductive noodle fragrance.
Because the noodles that are burned by the head of the bar are very hard, the hand kneading cannot be moved, and it needs to be pressed with a wooden bar, so it gets its name. The biggest feature is hard and fragrant. People who don't like it are afraid to crunch their teeth and don't eat it without biting it; people who like it, the madness of love, the more they chew, the more fragrant it is.
The Wanggao area of Shouguang City has been making bar head fires for hundreds of years.
The Eastern Han Dynasty man Zhao Qi lived in Beihai (now the Shouguang area) to sell cakes for a living. This is an example of the earliest written operation of baked bread (that is, today's hard noodle fire). It can be seen that at that time, Shandong's baked cakes were already circulated in society as commodities.
During the Qing Dynasty and the Republic of China, this noodle was widely used in feasts, during the Republic of China, Wang Fengmin, a pasta chef in Wang Gao Village, once opened a restaurant in Jinan Province to make a sign bun, diners and travelers praised it, and there was also an ode to "Wang Gao Bun, YaQian Cake" in Shouguang, and in modern local dramas, Weixian vendors also had the lyrics of "Shouguang walking, carrying two lever heads", which shows its popularity.

The reason why jujube wood is chosen is because of its large tendons and is not easy to bend. Kneading dough with a bar head is definitely a hard job, and according to the old people's recollection, the workshop is usually made up of two strong men taking turns to cope with the situation.
Because the noodles are hard and roasted with fire, they contain very little water, which can be eaten fresh and easy to carry, which is suitable for travel.
In ancient times, hemp rope was strung together and hung on the side of the saddle and next to the car, which was convenient for food. Nowadays, this food can be bought in the market streets of Shouguang and its surrounding areas, and the texture is softer than the traditional bar head fire, less the aroma of wood roasting, but the improved bar head fire is also more in line with the tastes of modern people.
In the northern region, especially in the three eastern provinces, Weifang's bar head is very famous. People go out and go down to the Kanto, and on the way they eat with a bar head; some are specially used as gifts for relatives and friends. This practice continued until the late 1980s. Today's bar head is still a hot-selling popular food.
