Practice steps

1. Wash the three yellow chickens and remove internal organs and stray hairs. Chives knotted, ginger sliced for later boiling water in the pot on high heat, carrying the head of the three yellow chicken into the boiling water repeatedly blanched 3 times, then put the three yellow chicken into the pot, turn off the heat and cover and simmer for 30 minutes, take out the cold water and let it cool, drain the water.

2: Take a cooking pot, add cold water (500ml), fragrant leaves, star anise, cloves, chives, ginger slices, salt, rock sugar, stir well, bring to a boil on high heat, then turn off the heat and let cool.

3: Add the bad marinade, flower carving wine and white wine to the cooking pot to make the drunken chicken marinade and set aside.

4: Let the boiled three yellow chickens cool and chop into 5cm wide and 3cm wide pieces.

5: Put the chopped three yellow chicken nuggets into a deep container with a lid, pour in the drunken chicken marinade, let the marinade pass all the chicken nuggets, cover and seal for 24 hours, take out and put on the plate.

Tips

1, when making drunken chicken marinade, you need to put the heated juice to cool before you can put in the bad marinade, flower carving wine and white wine, otherwise, the hot juice will make the wine volatile, and the taste of the drunken chicken produced will not be strong enough. 2. When cooking three yellow chicken, if you do not operate according to the method mentioned above, you can also directly put the clean three yellow chicken into boiling water and cook for 15 minutes on low heat, the taste is also good. 3. When mixing the marinade, you can also change the amount of various spices according to your own taste. However, it is worth noting that too much salt and liquor will cause the chicken to be a little bitter, if you want the wine to taste stronger, you can add more rice wine.
