After the winter solstice, there is a delicacy on the construction site - green pepper fried bacon, which often makes me very nostalgic. Every time at this time, many residents and canteens began to make bacon, the locals slaughtered the pigs that had been raised for a year, most of them were made into bacon and sausages, and the remaining part was made into "soaked meat", on the day of the pig killing, the relatives and friends who helped the feast were invited, everyone got together, ate meat and drank wine and chatted, it was very comfortable. So after the winter solstice, every day you can see the smoke between the mountains, that is, the pine smoke of making bacon fills the air. Making bacon is not complicated, guizhou locals will make it, and as a northerner, you will only enjoy it. When I started to eat green pepper fried bacon, I felt a little salty, but the spicy taste of green pepper can cover up some of the salty taste, the color red and green combination, but also pleasing to the eye, and later mixed with rice, I think it is very delicious. So much so that later, when I came home from a visit to my relatives, I would buy some for my family to taste, and there was very little bacon in the north at that time, and many people had not
