Ingredients required:
250 g of rice, 3 g of yeast, sugar, flour, raisins/dates/cranberries
Preparation steps:
Step 1: Prepare half a kilogram of rice, add water to wash it; then add water that has not yet passed the rice and soak it for 5 hours, at this time the state of the rice is crushed by a pinch.
Step 2: Pour the rice and water into the wall breaker together to beat into a delicate rice milk; add 3 grams of yeast and an appropriate amount of sugar to the bowl, then pour the beaten rice milk in and stir it well; finally cover with plastic wrap and wake up until the volume becomes significantly larger (about an hour and a half in the video).
Step 3: Stir the exhaust air with chopsticks to wake up the batter, then add a small spoonful of flour and stir well. If you are not ready to add flour, you can pour out the water when beating the rice paste, leaving a little water for the machine to rotate, so that the paste is as thick as yogurt.
Step 4: Pour the rice paste into the mold and lay it flat, taking care not to pour it too thickly; sprinkle a little raisins/cranberries/dates on the batter, and wake it up twice until the volume becomes significantly higher; then put it into the steamer basket.
Step 5: Add enough water to the pot, steam in cold water, boil the water and steam for 35 minutes and simmer for 5 minutes to open the lid. The rice cake is full of rice flavor and ready to go.
