Pay attention to food safety and stay away from health hazards
Recently, the Chongqing food safety regulatory authorities have organized the implementation of biscuits, catering food, tea and related products, fried food and nut products, egg products, starch and starch products, condiments, soy products, convenience foods, bee products, pastries, alcohol, frozen drinks, grain processing products, meat products, dairy products, sugar, edible agricultural products, edible oils, oils and fats and their products, vegetable products, potatoes and puffed foods, aquatic products, fruit products, quick-frozen foods, confectionery products, beverages, etc. A total of 1844 batches of samples of 26 types of food were sampled. The sampling results show that 1816 batches of qualified and 28 batches of unqualified. The information and sampling of unqualified foods are as follows:
1. Chongqing Nanchuan District Wind Zhicai Trading Co., Ltd. tongbang International City store to sell crucian carp (freshwater live fish), Enrofloxacin (measured value: 242 μg / kg, food safety relevant national standards stipulated value ≤ 100 μg / kg) does not meet the national food safety standards;
2. The bullfrogs and enrofloxacin (measured by the sum of Enrofloxacin and ciprofloxacin, the actual measured value: 298 μg/kg, the value specified in the relevant national standards for food safety is ≤ 100 μg/kg) in chongyi Street, Fuling District, which is operated and sold by penghong, a fish frog, and enrofloxacin (measured by the sum of enrofloxacin and ciprofloxacin, and the value specified in the relevant national standards for food safety ≤100 μg/kg) does not meet the national food safety standards;
3. Chongqing Hema Fresh Network Technology Co., Ltd. Guanyinqiao Branch operated and sold fresh polybautic fish (bulk weighing), Enrofloxacin (based on the sum of Enrofloxacin and ciprofloxacin, measured value: 161 μg /kg food safety relevant national standards stipulated value ≤ 100 μg / kg) does not meet the national food safety standards;
Enrofloxacin (including ciprofloxacin), enrofloxacin is a third-generation quinolone drug, is a class of synthetic broad-spectrum antibacterial drugs, used to treat animal skin infections, respiratory infections, etc., is an exclusive use of animals. Long-term consumption of enrofloxacin residues exceeding the standard of food, may accumulate in the human body, thereby causing harm to human body function, and may also cause the human body to develop resistant strains. The National Standard for Food Safety The maximum residue limit of veterinary drugs in food (GB 31650-2019) stipulates that the maximum residue limit of enrofloxacin in the skin and meat of fish is 100 μg/kg. The reason why the residual amount of enrofloxacin in freshwater fish exceeds the standard may be that in the process of breeding to quickly control the disease, the amount of drug use is increased in violation of the law or the drug suspension period is not complied with, resulting in excessive drug residues in the marketed products.
4. The red millet spicy (bulk weighing) and cadmium (measured in Cd, measured value: 0.11mg/kg, the value specified in the relevant national standards for food safety ≤ 0.05mg/kg) operated and sold by the He Yong Tobacco Food Business Department of Shapingba District do not meet the provisions of the national food safety standards;

Cadmium (in terms of Cd) is an accumulative heavy metal element that can enter the human body through the food chain. Long-term consumption of foods with cadmium exceeding the standard may cause damage to the human kidneys and liver, but also affect the immune system, and may even damage the higher neural activity of children. The National Standard for Food Safety (GB 2762-2017) stipulates that cadmium (in terms of Cd) has a limit value of 0.05mg/kg in crabs, fresh vegetables (except leafy vegetables, legumes, root and tubers, stem vegetables, and broccoli). This sampling found that 1 batch of leeks and 1 batch of pepper samples had cadmium exceeding the standard, which may be cadmium elements enriched in the environment during their growth.
7. Fengdu County Ran's Gaoliang Liquor Department (Ran Yufang) operated and sold sorghum liquor (bulk), the total ester (measured in terms of ethyl acetate, measured value: 0.21g/L, the relevant national standards for food safety ≥ 0.50g/L); the total acid (in terms of acetic acid, measured value: 0.09g/L, the relevant national standards for food safety ≥0.30g/L) does not meet the provisions of the national food safety standards;
The total ester (in terms of ethyl acetate) is the sum of all ester aromatics in liquor, and the amount of its content is related to the quality and aroma of the wine, if the total ester content is too low, the wine taste is thin. The total ester is not up to standard, there may be a quality control problem before leaving the factory, the manufacturer in the production process of the fermentation time, fermentation temperature control is not strict, resulting in low ester content; there may be a reduction in the ester in the natural storage process, aromatic liquor in the storage process, there will be a decrease in total ester, total acid increase in the phenomenon, may lead to factory inspection of the total ester qualified, but the time is lower than the national standard.
8. Fengdu County Jianglu Baijiu Outlet Department (Dai Zhurong) operated and sold sorghum liquor (bulk), total acid (in terms of acetic acid, measured value: 0.12g/L, food safety relevant national standards stipulated value of ≥0.30g/L) does not meet the national food safety standards;
Total acid (in terms of acetic acid), some of the alcohol in the brewing process of the wine will be converted into carboxylic acid, and then a variety of ester compounds are formed, so that the wine has a special aroma. The national standard stipulates that the total acid amount of high-quality and highly aromatic liquor (in terms of acetic acid) should be no less than 0.30g/L. Organic acids in liquor are divided into two categories: volatile and non-volatile acids, volatile acids represented by acetic acid, which play a role in foiling and buffering the aroma of wine, and non-volatile acids are mainly lactic acids, which can reconcile the quality of the wine and reduce the intensity. Organic acids themselves have aromas, in the wine also play a flavoring role, if the content and proportion is appropriate, after drinking will feel refreshing and sharp. On the contrary, less acid will make the wine dull and short aftertaste, and the excessive amount of acid will make people feel sour and pungent.
9. The duck intestine (bulk) processed and sold by the Shapingba District Pick Uncle Gong String Fragrant Catering Shop (measured value: 129.90mg/kg, the relevant national standards for food safety stipulate that "shall not be added") do not meet the provisions of the national food safety standards;
Formaldehyde is a normal metabolic component in many foods, including fruits, vegetables, livestock and poultry meat, fish, crustaceans, etc. However, most foods have a low amount of formaldehyde and do not pose a health hazard. The formaldehyde in food is artificially added for preservation, preservative, and artificial. In the "GB 2760-2014 Food Safety National Standard For the Use of Food Additives Standard", the limit of polymer synthesized with formaldehyde as one of the raw materials is stipulated as a food contact coating and coating, but formaldehyde is not listed as a food additive. Therefore, it is forbidden to add formaldehyde to food. At the same time, it is introduced or contaminated during food processing. Formaldehyde is a chemical material that can be used in the preparation of food contact materials. However, in the process of processing, formaldehyde monomers and various formaldehyde oligomers may remain in food contact products, and can be further migrated to food as the product comes into contact with food. Formaldehyde contamination in the environment can also cause residual formaldehyde in food. For example, formaldehyde aqueous solution in the environment is used for facility and tool disinfection, environmental disinfectant or three-dimensional space fumigation disinfectant, which can cause different degrees of environmental pollution, thereby contaminating food. On October 27, 2017, the World Health Organization's International Agency for Research on Cancer released a list of carcinogens, which placed formaldehyde in a class of carcinogens. Compared with the tender and crisp taste of duck intestines, meatballs are more rigid and Q-bullet, so they are more popular with friends. In order to "satisfy" consumers' pursuit of food, some merchants add borax to meatballs to increase the taste. In the "List of Non-edible Substances and Food Additives That May Be Illegally Added to Food" issued by the Ministry of Health, borax may be added to foods such as humus, meatballs, and noodles to achieve the purpose of increasing gluten. After consuming borax, the substance changes to boric acid in gastric acid, which is absorbed by the gastrointestinal tract. If excessive consumption, there are toxic to a variety of organs in the human body, endangering the role of digestive tract enzymes, reducing appetite, inhibiting the absorption of various nutrients, thereby accelerating the breakdown of fat, weight loss, acute vomiting, diarrhea, dizziness, headaches and other symptoms.
10. Zhao Hongjun, Sucun Town, Dali County, Shaanxi Province, and the dried yellow flowers (bulk weighing) and lead (measured in Pb, measured value: 0.154mg/kg, the value specified in the relevant national standards for food safety ≤0.138mg/kg) operated and sold by Chongqing Trading Company New Century Department Store Chain Operation Co., Ltd. does not meet the provisions of national food safety standards;
Lead (in terms of Pb) is a kind of heavy metal pollutants that can accumulate in the organism and eliminate slowly, if the human body consumes a large amount of food with excessive lead content for a long time, lead will accumulate in the body, endangering human health. The National Standard for Food Safety (GB 2762-2017) stipulates that the limit of lead (in Pb) in solid compound seasonings is 1.0mg/kg. The lead content exceeding the standard may be that the production enterprise does not strictly control the raw materials, uses raw materials with excessive lead content, or it may be the lead migration in the processing equipment, containers, and packaging materials in the food production and processing process.
11. The black fungus (bulk) sold by the Jieya Food Business Department of Changshou District (measured value: 16.2g/100g, the value specified by the relevant national standards for food safety ≤12g/100g) does not meet the provisions of the national food safety standards;
Moisture is a quality index of solid type food, which is closely related to product quality stability and microbial growth conditions, and is an important factor affecting product quality. The main reason for the non-conformity of moisture may be related to improper control of the production process and environment, or improper conditions in the storage and transportation process.
12. Fresh river noodles (rice noodle products bulk weighing) produced by Zhongxian Fenghui Food Processing Co., Ltd. and operated and sold by Bingying Vice Food Store on Pinghuan Road, Chungxian County, dehydroacetic acid and its sodium salt (measured in terms of dehydroacetic acid, measured value: 0.176g/kg, the relevant national standards for food safety stipulate that "shall not be used") do not meet the provisions of the national food safety standards;

Dehydroacetic acid and its sodium salt (measured in terms of dehydroacetic acid), dehydroacetic acid and its sodium salt as a broad-spectrum food preservative, strong inhibition of mold and yeast, in high doses can inhibit bacteria. Dehydroacetic acid and its sodium salt can be completely absorbed by the human body, and can inhibit a variety of oxidases in the human body, long-term excessive intake of dehydroacetic acid and its sodium salt may endanger human health. The reason for the excessive dehydroacetic acid may be that individual production and operation enterprises have used the additive in excess to prevent food spoilage, or the compound additive used has a high content of the additive. The National Standard for Food Safety and the Standard for the Use of Food Additives (GB 2760-2014) stipulate that dehydroacetic acid and its sodium salt shall not be used in processed grain products.
14. Bean sprouts (bulk) and sodium 4-chlorophenoxyacetate (measured in terms of 4-chlorophenoxyacetic acid, measured: 0.106mg/kg, the relevant national standards for food safety stipulate that "shall not be detected") do not meet the provisions of the national food safety standards;
Sodium 4-chlorophenoxyacetate, also known as anti-fallin, is an assortant, broad-spectrum, efficient, multi-functional plant growth regulator, mainly used to prevent falling flowers and fruits, inhibiting legumes from rooting, etc., and can regulate the balance of hormones in plant plants. Sodium 4-chlorophenoxyacetate is a white needle-like or prismatic crystal, slightly phenolic taste, easily soluble in water, stable in nature, long-term storage without deterioration, and accumulated toxicity to the human body. The national food safety standard stipulates that producers shall not use substances such as sodium 4-chlorophenoxyacetate in the production process of bean sprouts, and bean sprout operators shall not operate bean sprouts containing sodium 4-chlorophenoxyacetate and other substances. Sodium 4-chlorophenoxyacetate detected in bean sprouts may be due to the illegal use of bean sprouts by producers during the production process in order to inhibit bean sprouts from rooting and increase bean sprout yields.
15. Sorghum liquor (47% vol in bulk) produced and sold by Tongcheng Distillery on the Bund in Tongnan District does not meet the requirements of national food safety standards (measured value: 50.3% vol, relevant national standard value of food safety: 47±1.0% vol);
Alcohol: that is, the concentration of ethanol in the wine (volume percentage), refers to the number of milliliters of ethanol contained in 100 ml of wine at 20 ° C. Alcohol content is an important quality index of wine products, and failure to meet the standard will affect the quality of wine. The reason for the unqualified alcohol content may be that the production process of the production enterprise is improperly controlled, the inspection capacity is insufficient, the alcohol degree is deviated, or the ethanol volatilization may be caused by loose packaging and improper storage and transportation, resulting in a decrease in alcohol content, and it may also be that the enterprise uses low-grade wine to pass off as high-alcohol in order to reduce costs.
16. Fuling District Chongyi Street Yimen Baijia handmade chutney powder Jiang Yuhong business and sales of rice noodles, benzoic acid and its sodium salt (in terms of benzoic acid, measured value: 0.125g / kg, food safety national standards stipulate that "shall not be used") does not meet the national food safety standards;
Benzoic acid and its sodium salt (in terms of benzoic acid), benzoic acid and its sodium salt are a kind of preservative commonly used in the food industry, which has a good inhibitory effect on mold, yeast and bacteria. Long-term consumption of benzoic acid and its sodium salt exceeding the standard of food, may cause liver accumulation poisoning, endangering liver health. The reason why the detection value of benzoic acid and its sodium salt (in terms of benzoic acid) in capers exceeds the standard may be that the production enterprise exceeds the limit of use in order to extend the shelf life of the product or make up for the poor sanitary conditions of the product production process; it may also be that it is not accurately measured during use.
17. Yucheng squeezed vegetables (measured and weighed), benzoic acid and its sodium salt (measured and weighed) entrusted by Chongqing Fuling District Yuanya Food Co., Ltd. and produced by Chongqing Geyunjia Agricultural Development Co., Ltd. and operated and sold by Hu Wujun of Jiugongmiao Market, Dadukou District, Chongqing (measured in terms of benzoic acid, measured value: 1.43g/kg, the value specified in the relevant national standards for food safety ≤1.0g/kg) The sum of the proportions of the respective amounts of preservatives used in the mixed use of their maximum use (measured value: 1.6, the value specified in the relevant national standards for food safety ≤1) does not meet the provisions of the national food safety standards;
Preservatives, common food additives, are commonly used to delay or inhibit food spoilage caused by microorganisms. If you eat foods with preservatives in excess of the standard for a long time, it will cause damage to human health. To this end, the National Standard for Food Safety The Standard for the Use of Food Additives (GB 2760-2014) stipulates that the sum of the proportion of preservatives used in their respective maximum uses when mixed should not exceed 1.

Acid valence (in terms of fat) is an indicator of the content of free fatty acids in oils and fats, which are slowly hydrolyzed due to the action of light, enzymes and heat during long-term preservation of oils and fats, resulting in free fatty acids. The quality of fat is related to the content of free fatty acids, and acid valence is generally used as one of the criteria. In the production process, the acid price can be used as an indicator of the degree of hydrolysis, and in the storage process, it can be used as an indicator of rancidity. The acid price is unqualified, and it will generally be accompanied by a "hara" taste of the product. Eating foods with excessive acid prices may cause gastrointestinal discomfort, diarrhea and even damage to the liver, endangering human health and safety.
22. Zhu Zhifang peanut crushed, aflatoxin B₁ (measured value: 216 μg/kg, ≤20 μg/kg) produced by Zhifang Food Co., Ltd. of Tancheng County, Linyi City, Shandong Province, and sold by He Zongxin Grain and Oil Wholesale Department of Hongyuan Market, Wanzhou District, Chongqing City, does not meet the national food safety standards;

The national standard for food safety stipulates that the maximum limit value of aflatoxin B1 in peanuts and their products is 20 μg/kg. The reason why the detection value of aflatoxin B1 in peanut rice exceeds the standard may be that the raw materials used by production enterprises are contaminated by mold such as aflatoxin, or it may be that the sanitary conditions in the production and processing process are not strictly controlled, and it may also be related to the lax sealing of product packaging and improper control of storage and transportation conditions.
23. Fengjie County's Chushun Vermicelli Processing Plant, Fengjie County Zeng Vermicelli Food Business Department to sell the vermilion vermicelli (bulk sweet potato vermicelli), aluminum residue (dry samples, measured in Al, measured value: 344mg/kg, food safety national standards stipulated value ≤200mg/kg) does not meet the national food safety standards;
The residual amount of aluminum (dry sample, measured in Al), potassium aluminum sulfate (also known as potassium alum), and aluminum ammonium sulfate (also known as ammonium alum) are commonly used food additives in food processing, and aluminum residues are produced after use. Aluminum-containing food additives can be used as leavening agents, stabilizers, neutralizers and curing agents, etc., and many countries such as the United States, EU member states, Australia, New Zealand, Japan and China are allowed to use aluminum-containing food additives. The National Standard for Food Safety and the Standard for the Use of Food Additives (GB 2760-2014) stipulate that the residual amount of aluminum in vermicelli foods (dry samples, measured in Al) ≤ 200mg/kg. The residual amount of aluminum in the vermicelli (dry sample, in terms of Al) exceeds the standard, which may be due to the producer's use of aluminum-containing additives in excess of the limit during production and processing in order to improve the taste and appearance of the product, or the excessive content of aluminum in the compound additives used.
24. Tableware-bowl, anionic synthetic detergent (measured in sodium dodecylbenzenesulfonate, measured value: 0.036mg/100cm², relevant national standards for food safety stipulate that "shall not be detected"); coliform bacteria (measured "detected", food safety national standards stipulate that "shall not be detected") do not meet the national food safety standards;

Anionic synthetic detergent (sodium dodecylbenzenesulfonate), anionic synthetic detergent, that is, the main component of detergents such as laundry detergent and detergent often used in our daily life, its main component sodium dodecyl sulfonate, is a low toxic substance, because of its convenient use, easy to dissolve, good stability, low cost and other advantages, widely used in disinfection enterprises, but if the cleaning and disinfection process of meal (drink) utensils is improperly controlled, it will cause detergent residues on meal (drink) utensils, which will have adverse effects on human health. The National Standard for Food Safety Disinfection Meal (Drink) Appliance (GB 14934-2016) stipulates that the anionic synthetic detergent of meal (beverage) utensils using chemical disinfection method shall not be detected. The reason for the detection of anionic synthetic detergent in the meal (drink) utensils may be that the detergent used by some units is unqualified or the amount of detergent used is too large, and the washing water in the tableware rinse pool is not rinsed with enough water or the tableware rinse pool is reused or the number of tableware is large, resulting in cross-contamination, and then residual in the meal (drink) utensils.
26. Xinshu brushed bread (bulk weighing) produced by Xuzhou Maixiangju Food Technology Co., Ltd. in Jiangsu Province and sold by Xinyuan Supermarket in Tongxi Town, Hechuan District, Chongqing City, acid price (measured in terms of fat, measured value: 17.0mg/g, the value specified by the relevant national standards for food safety is ≤5mg/g); peroxide value (in terms of fat, measured value: 0.33g/100g, the relevant national standard value for food safety is ≤0.25g/100g) does not meet the provisions of the national food safety standards;
Peroxide value (in terms of fat), peroxide value is an early indicator of rancidity of oil, mainly reflecting the degree to which oil is oxidized. Eating foods with excessive peroxide values generally does not cause damage to human health, but long-term consumption of foods with serious peroxide values may lead to gastrointestinal discomfort, diarrhea and so on. The National Standard for Food Safety Biscuits (GB 7100-2015) stipulates that the maximum limit value of peroxide value (in terms of fat) in biscuits is 0.25g/100g. The National Standard for Food Safety for Nuts and Seeds (GB 19300-2014) stipulates that the maximum limit value of peroxide value (in terms of fat) in cooked other fried foods and nut products is 0.50g/100g. The National Standard for Food Safety In Cakes and Bread (GB 7099-2015), the maximum limit value of peroxide value (in terms of fat) in pastries is 0.25g/100g. The reason why the peroxide value (in terms of fat) in biscuits, other fried foods and nut products and pastries exceeds the standard may be that the fat in the raw materials has been oxidized, and may also be related to the improper control of environmental conditions during the storage and transportation process of the product.
27. Bananas (bulk weighing) and imidacloprid (measured value: 0.50mg/kg, the value specified in the relevant national standards for food safety ≤ 0.05mg/kg) operated and sold by Jinxiangfa Department Store in Youyang County do not meet the provisions of the national food safety standards;
Imidacloprid is a nitromalline endosteric insecticide, which belongs to the nicotinoyl chloride insecticide, also known as neonicotinoid insecticide, with multiple effects such as touch killing, gastric toxicity and systemic suction. The National Standard for Food Safety The maximum residue limit of pesticides in food (GB 2763-2019) stipulates that the maximum residue limit of imidacloprid in fruits is 0.05mg/kg. The reason for the excessive imidacloprid in bananas may be caused by the overuse of growers in the planting process to control insect pests. A small amount of pesticide residues will not cause acute poisoning in the human body, but long-term consumption of food with excessive pesticide residues has a certain impact on human health.
28. The seasoned noodle products (80 grams/bag) of pickled pepper beef tendons entrusted by Chongqing Lu Wenjian Food Co., Ltd. and operated and sold by Chongqing Wansheng Economic Development Zone Tianhe Department Store Co., Ltd. Jiangshancheng Branch, the total number of colonies (measured value: 6.4×10⁴; 1.3×10⁴; 4.2×10⁴; 1.3×10⁴; 1.1×10⁴CFU/g, food safety relevant national standards: n=5, c=1,m=10⁴, M=10⁵ CFU/g) does not comply with national food safety standards.
The total number of colonies is an indicative microbial indicator, not a pathogenic indicator, reflecting the hygienic status of the food in the production process. If the total number of colonies in food is seriously exceeded, it will destroy the nutritional composition of food and make the food lose its edible value; it will also accelerate food spoilage, which may endanger human health. The reason why the total number of colonies in meat products and solid beverages exceeds the standard may be that the enterprise does not strictly control the sanitary conditions of the production and processing process according to the requirements, and may also be related to the lax sealing of the product packaging or improper storage and transportation conditions.
