People who have experienced the wet and cold winter in Jiangnan know that the most bitter in the world is to get up early in winter. Therefore, the industrious mothers in Jiangnan often take breakfast as bait and compete with warm bedding for their children: fritters, soy milk, porridge, pickles, fish jelly, white porridge, scrambled eggs, mixed tofu, are all "weapons" that come to hand.
In my experience, the allure of winter breakfast is proportional to the thickness of the oiliness. Because of the thirst for heat, you can fight off the cold and laziness. Gao Yang (gourmet, 1922-1992) wrote that the breakfast of the Songjiang people in the late Qing Dynasty, with wine and vegetables, was "hard rice". In "Dream of the Red Chamber", the old lady ate steamed lamb with cow's milk at breakfast, which is unimaginable. The best home is cold white cut lamb or cold ham slices or silk with hot white porridge, the entrance is fragrant and crisp, the most beautiful.
When I grow up, I will learn to go out in the dark in the winter to buy breakfast. The sky is still dark, there are few cars on the road, and there is a cold night. The night sale is closed, the vendors and shops selling breakfast are lit up and set up fires, the sound of ping-pong ping-pong stoves, and the white gas of the steamers in the big drawers all make people warm up and scare away the cold. The phrase "bun just out of the drawer" can only be understood by anyone who buys breakfast at dawn. I usually love to eat Xiaolong soup buns, in the early morning a pair of cold hands to take a pair of small steamed soup buns, a bite through, eat until the fragrant juice overflows and slightly hot stuffing, so full of happiness is unparalleled.
If you buy breakfast early in winter, it is easy to encounter the situation of "the cake is not good, wait for five minutes". The peak period is far from coming, and it is still too late for acquaintances and delicate shopkeepers to chat. This is a bit like the atmosphere of the night - there are few people, the streets are quiet, the lights are warm, there are a bunch of idle, the breakfast stalls are used as garden parties, and you can "pick flowers and weeds" everywhere. For example, first go to the raw fried bun shop to pay the treasurer, turn around to buy a leek cake, a bacon cake, two fritters and a bowl of soy milk, and come back to Shi Shiran to eat while queuing up, waiting for the hot raw fry to come out of the oven.
Probably the winter breakfast is tempting, for these factors:

When I was in Chongqing, I always ate small noodles and oil tea for breakfast. Among the foods I have personally seen, Chongqing noodles are the most exaggerated ratio of ingredients to seasonings. I didn't see it, I really can't believe it: palette-like cloth opened chili pepper, paprika (in Chongqing, the two are very different), fried peppercorns, flower peppers, red oil, peanut crumbles, red, green, gray and yellow, and shops will come to squeeze diced vegetables, tempeh, and leek minced - more than a dozen or twenty samples, all to set off a bowl of noodles. The noodles came out of the pot, and the boss made a big deal of it on the noodles. Eat it, full of mouth crackling, the taste jumps; because it is spicy and hot, you have to eat quickly, so eat small noodles, such as a fast boat across the gorge, and like watching a beautiful woman sprint, the scenery is not time to see, dazzling.
Oil tea, because all buy ready-made, I have not known how to make it. Roughly a rice soup-like paste, you can eat salt, lard, peppercorns, pepper, oil chili, add chopped soybeans or peanuts and finally add some sǎn zi pieces - it may also be fried noodles. I had breakfast in Tianjin and tasted noodle tea once. I don't know if it's shú rice or noodles, but i boil it into a paste and sprinkle it with tahini and pepper salt. The fritters in Tianjin – or the fruit – are not coarse but crisp compared to our Churros in Jiangnan. It is comfortable to bite, not easy to look like some places, bite a sticky mouth, eat it and blush.

In Wuhan, I ate hot dry noodles for breakfast, and later, whenever I saw a Wuhan restaurant, I couldn't get around this road. The essence of hot dried noodles is tahini. After the noodles are cooked and dried, and after the tahini sauce is placed, the whole bowl has a coarse and majestic aroma. Pick up the noodles, drag the mud with water, stick to the thick, sweet and fragrant; if you add a little dried radish and green beans, the whole bowl of noodles will follow the living color and fragrance.
In Hainan, I ate steamed powder once for breakfast. The islanders practiced, the powder and egg liquid were combined, and a little oil was added - and the rice noodles were added, which is said to be the secret of Hainan Baoluo powder - and then steamed; steamed liquid just appeared solid, looking white bright and shivering hot steam, add spicy seeds and capers to eat, red, white, green and yellow, eat sweaty.

People in Wuxi, Suzhou and Shanghai eat breakfast, not far from each other. If you love noodles, go to the noodle shop in the morning to queue up, wait for the first soup noodles, and often call it wide soup - breakfast needs to be replenished. Duck noodles, pickle shredded meat noodles, three fresh noodles, dried bamboo shoot noodles, my dad also loves to add ginger shreds. If you don't eat noodles, you can eat porridge at home - Wuxi is called bubble rice. Under the rice, dried radish, edamame, pork floss, fish jelly, salted tofu, dried silk. In the summer, you can also eat a salted duck egg or a watermelon peel marinated in soy sauce for breakfast.
Soybean milk fritters, the north and the south eat differently. I heard from my friends in Tianjin that they used to drink clear pulp there. Salty pulp or soy milk with pork floss may have been created by Shanghainese. Jiangnan fritters are thicker than in the north, not brittle and tough, just out of the pot, the two pointed ends are particularly soul-destroying. Shanghai people eat raw fried, Wuxi people eat soup buns, they can deliberately queue up. Wuxi also eats salted bean blossoms here: seasoned with salt and oil, with squeezed chopped vegetables, smooth as eggs. I've seen salted bean blossoms with sweet rice balls — sticky rice on the outside, occasionally fried fritters, added sugar, and crispy on the outside — and it's a bit jammed when I think about it.
