Rinse with a fine mesh filter and drain the white beans. Pumpkin, lemon juice, tahini, sea salt, cumin, smoked paprika, nutmeg, cinnamon and cayenne are then added to a food processor or blender. Whisk into a creamy and smooth puree, scraping off both sides as needed.

Heat the oil in a small pan or pan over medium heat. Add sage and sauté for a few minutes until slightly browned (this will deepen the taste). Then add to the food processor and pulse (you can keep some for decoration if you want).

Taste and adjust the seasoning as needed, add more salt for added saltiness, add lemon for added acidity, add cinnamon for added warmth, add cumin or paprika for added smoky flavor, add tahini to add nutty flavor, add olive oil for added cream flavor, or add paprika for added heat.

Serve immediately with Pita fries and selected vegetables. Or refrigerate for about 3-4 hours for a thicker, creamier dip. Leftovers can be stored in the refrigerator for up to 5-7 days.
