Usually, fried dumpling restaurants will pay more attention to the quality of the meat filling, and the dumpling skin is more casual. But Fangchun's fried dumplings are as particular about the skin as the filling. The self-rolled dumpling skin is a few points thinner than the usual one, wrapped in the Jiaxing local pork filling stirred into the homemade soup and meat jelly, fried quickly, and the bottom of the fried dumplings becomes brown and crispy under the action of the Maillard reaction. As soon as you bite into it, the juice of the fried dumplings bursts out from the other end, the amount of meat filling is just right, it will not feel greasy, and with a bowl of small wontons, it is definitely an appetizing breakfast.
