"White-shelled crabs are already available in nature, but they are extremely rare. Wu Xugan said, "You may take it for granted whether you have albinism. Actually, it's not the result of natural evolution. ”

At the beginning of that year, the team of professors Cheng Yongxu and Wu Xugan led the graduate students to select these white-shell crabs for family and group breeding. After four generations of purification, a new strain of "white jade crab" has been formed.

"In the past two years, we have selected adult crabs with large bodies and pure white shells as the next generation of parents, and the retention rate is only about 5%, which is very strict. Wu Xugan said.

After cooking, the "white jade crab" can still maintain its unique white shell shape and will not change color like ordinary hairy crabs. Wu Xugan explained that this is because the shell of the "white jade crab" lacks astaxanthin and β-carotene. "The test found that the content of astaxanthin, β-carotene and zeaxanthin in the crab roe and crab paste of 'white jade crab' was no different from that of ordinary blue-shell crabs. Wu Xugan said.

As for the edible rate and nutritional value, the ratio of crab meat, crab roe and crab paste, as well as the contents of protein, fat, essential amino acids and fatty acids are very close to each other. The research team also found that the "white jade crab" and the green shell crab had similar reproductive performance and embryo quality, but the egg-holding rate of the white shell strain after mating was significantly higher than that of the latter. In addition, the "white jade crab" grows faster, and the proportion of "big guys" is also higher.
