Pineapple buns are a super classic loaf of bread. The secret that has endured for many years is the crispy skin like pineapple skin on the outside of the bread, and who can not love the sweet crisp.
Today's puff pastry recipe brought by hip hop, butter: flour is 1:1.2, need to soften the butter in advance, but no need to send, non-stick hands, it is easy to form a ball, and the crispness is also very good, a bite of slag, hahaha ~

High gluten flour 220 g

At the end of a shot, come and make puff pastry.
The butter softens to the point where you can press it by hand, do not soften it too much. Stir the butter and powdered sugar with a silicone spatula to mix well.
Sift in low powder and milk powder and stir well.
Rub the long strips with your hands. Wrap in plastic wrap and freeze for about 20 minutes.
———— Part III: Shaping and Baking —————
Remove the dough in one shot. Divide into 7 portions, each serving of small dough about 60 g.
Roll each portion of the small dough, cover with plastic wrap and let loose for 20 minutes.
Gently flatten each small dough by hand from the middle to the sides as shown. Gently drain the bubbles that have been driven to the edge. Then roll the dough round again.
Remove the puff pastry from the refrigerator and divide into 7 portions of about 23 grams each. Quickly rub it into a ball by hand.
⭐ Now that the weather is warmer and the puff pastry can quickly get a little sticky, here are my tips for wrapping puff pastry.
If the temperature is high indoors, when wrapping a puff pastry, you can first refrigerate the other puff pastry balls.
1. Place the puff pastry balls in plastic wrap and roll out into round pieces. The disc should be 3/4 the size of the dough.
2. Uncover the plastic wrap on the upper layer of the puff pastry disc.
3. Padding the lower layer of plastic wrap, pick up the puff pastry with your left hand. With your right hand, pick up a small dough, as shown in the picture, and cover the puff pastry (with plastic wrap) over the dough.
4, then flip it over. As shown in the figure.
5, with the help of plastic wrap, first wrap the puff pastry inwards and gently press so that the puff pastry sticks to the dough.
6, with the help of plastic wrap again, flip the dough wrapped in puff pastry, and then remove the plastic wrap.
The dough wrapped in puff pastry is placed in a baking dish and fired twice at a temperature of 35 degrees Celsius and a humidity of about 80%.
It lasts about 50 minutes. Whisk the bread to 1.5-2 times larger, press the surface of the bread with your hand (do not press the puff pastry) and slowly rebound.
At this time, the puff pastry has a slight crack with the swelling of the bread, which is normal.
Brush the puff pastry surface with egg mixture and cut a few lines with a knife. Place in preheated oven at 175 degrees for 20 minutes.
