3Pour in the filled beef broth, add a little black pepper with half a small bowl of water, mix well with instant coffee, bring to a boil over high heat, turn to minimum heat and simmer until soft.

Sauce:

2 packs instant coffee, 15g brown sugar, 15g white sugar, 15g minced garlic, 30g spicy soy sauce, 15g rice wine (optional), 15g dark soy sauce, 45ml water.

Specific steps

1. Cut the ribs into small strips and place in a bowl.

2. Add milk ribs, salt, sugar, oyster sauce, sesame oil, soda powder, rice flour, starch, water, egg liquid, mix well and marinate for 1 hour.

1. 1 tablespoon of ground coffee and a little hot water to make a very strong coffee liquid

3. Egg white plus 10g sugar to beat neutral foaming

4. Boil 40g sugar + 15g water to 121 degrees, and whip at high speed while flushing into the egg white

Steps:

1 small bowl with 3 tbsp water, sprinkle with gelatin, stir well in a small whisk and set aside.

Add 2 sugar and water and bring to a boil over low heat.

3Add gelatin water and coffee, stir to melt and turn off the heat.

4Put it in a flat-bottomed container, let it cool, then put it in the refrigerator to refrigerate, curdle and eat.

5To eat, cut the frozen coffee into 1 cm cubes and drizzle with fresh milk.
