Kitcha (or kita) refers to a type of unleavened bread popular in Ethiopia and Eritrea. It is made by mixing wheat flour, water and salt, kneading into a dough, and then cooking it in butter in a pan.

Kitcha can be eaten alone, but it is also often eaten with the popular Ethiopian breakfast Kitcha firfir (or Kitcha fit fit, chechebsa). Kitcha can be torn into small pieces and mixed with bebere and nitter kibbeh (a spice butter made from various spices, including besobela (Ethiopian holy basil), cumin, coriander, corallima (Ethiopian coriander) and coseret).

On a warm East African afternoon, gluing Kitcha firfir to a piece of pure yogurt and pairing it with Ethiopian hot coffee or tea will be the happiest afternoon tea on earth.

Unlike most Ethiopian dishes, it is eaten with a spoon, not by hand.
