Introduction to Bai Nian Winery

Xinjiang Bainianzhuang Wine Industry Co., Ltd. is located in Quhui Town, Heshuo County, Xinjiang, founded in 2010, its own 2560 acres of base began planting in 2007. The main varieties of wine grapes cultivated are Cabernet Sauvignon, Pinot Noir, Marselan, Sangiovese, Merlot, Chardonnay, Riesling, Weddell and rose grapes that are used to make and dry wine.

Bai Nian Winery is surrounded by tianshan mountain branches on three sides, and on the other side, it is adjacent to China's largest inland freshwater lake - Bosten Lake, which is known as the Mountain Lake wine region because of its exclusive "mountain lake effect" brought by Tianshan Andang Lake and Bosten Lake. It has dry and loose high-quality gravel soil, 3200 hours of average annual sunshine, 178 frost-free periods, 15 degrees of temperature difference between day and night, and an average annual average of 78 mm of rare rainfall, and 8.0 slopes of the north shore of alkaline soils. The harsh natural conditions result in the optimal glycoic acid ratio of the grapes, giving the wine a unique personality that is more structural, more balanced, rich in taste and rich in aroma. At the same time, a large amount of blue-violet light and ultraviolet light reflected from the water of the similar Bosten Lake are conducive to the accumulation of grape fruits and sugar, and the sugar-acid ratio is moderate, and the color, aroma and taste of the wine produced have world-class quality.

Unique geographical conditions have enabled the wines of the Pegatron appellation to be protected by the National Geographical Indication. This not only indicates the geographical origin of the product, but more importantly serves as proof of the quality of a particular product.

Bainian Winery has a modern management mechanism, has passed the ISO9001 quality management system, HACCP system and other certifications, the planting base raw material wine grapes have obtained the EU organic and Chinese organic double certification, Bainian Winery production products have obtained the "Wine Estate Wine Certification Trademark" authorization.

Cabernet Sauvignon is a late-maturing variety that can be fully ripened in the Heshuo region of Xinjiang, where the sun is abundant, the temperature difference between day and night is large, the sugar accumulates well, and the wine produced is deep in color. The grapes are all hand-picked, hand-selected by ear, fermented and macerated in cans, and pressed out of the jars after the aromas and tannins in the peels are fully extracted. Transfer 100% artesian liquor to oak barrels for aging. Rich black fruit with a hint of cigar box sweetness, mocha, black cherry, blackberry, kitchen spices and a burst of vanilla, classical rich and sweet.

Adhering to the traditional process of brandy and the ingenuity of the winemaker, this product is distilled by the charend pot after two times of distillation of the original brandy into the barrel of 68% vol; and then through the French oak barrel, Port wine barrel storage and curing for 6-10 years, during the period after three times to reduce the wine level after storage so far, now with the wine degree of 50% vol original barrel strength bottle, look forward to presenting the beauty of aging in your barrel.

Zhang Yi

He graduated from Wuxi Polytechnic University with a bachelor's degree in bioengineering, and later studied for a master's degree in food engineering from the School of Wine, Northwest A & F University.

He is a national wine judge of the China Wine Association, a national first-class sommelier, a national first-class winemaker, and the deputy secretary-general of the Tianshan North Foothills Wine Industry Alliance and the deputy director of the expert committee.

With 16 years of winemaking work experience, from 2017 to 2019 spring to Australia exchange and study, continuous progress and excellence of the spirit of craftsmanship, in the domestic industry is well received.
