Preparation steps:
Step 1: Prepare 300 grams of ordinary flour in a bowl, add 1.5 grams of salt and 15 grams of cooking oil, mix well, then use 140 grams of room temperature water and noodles, and knead into a flocculent shape, then put the dough into a plastic bag and relax for 15 minutes.

Step 2: Wash a small amount of leeks, shake off the water and cut into fine minced and put into a large bowl; then add the appropriate amount of cooking oil, mix well and set aside; then take out the slack dough, knead well and then put it into the plastic bag again for 15 minutes.
Step 3: Beat 3 eggs into the bowl, stir well, then add an appropriate amount of cooking oil to the pot, fry an egg for later; add a little cooking oil to the pot again, put the chopped shrimp skin into the pot and stir-fry on medium heat; after all is done, take out the slack dough, knead well again, knead into a smooth and delicate dough, and put it into a plastic bag again for 15 minutes.
Step 4: Take out the loose dough, press it directly with a rolling pin and roll it out; then use the rolling pin to roll up the dough, roll it out and push it to form a thin dough like paper.
Step 5: Divide the rolled dough into two, then sprinkle the leeks, eggs and shrimp skins evenly on the dough, then roll up the dough and knead it again; finally put it on the wet cage cloth, boil the water on the pot and steam for about 15 minutes.
Step 6: Prepare the garlic water. Add minced garlic, green onion, white sesame seeds to the bowl, then splash with two spoonfuls of hot oil to stimulate the garlic flavor; then add five-spice powder or chili noodles, a small spoonful of light soy sauce, two spoonfuls of balsamic vinegar, a small half spoon of sugar, and mix well.
Step 7: Take out the steamed vegetable roll, cut into appropriate sized pieces, and dip in the mixed garlic water to eat.
