Northern Shaanxi snack: chopped buckwheat noodles

Chopped soba noodles are traditional Snacks of the Han people in Dingbian, Jingbian and Wuqi regions of Shaanxi. In October 1935, when the Central Red Army triumphantly arrived at Wuqi in northern Shaanxi, the people of Wuqi entertained Chairman Mao, the central leaders and the soldiers of the Workers' and Peasants' Red Army with chopped noodles. There is a saying in Wuqi: "Aunt In-law is not strong, look at whether the chopped noodles are long, the aunt is unfavorable, and see if the chopped noodles are fine or not." In northern Shaanxi, chopped soba noodles are a delicacy that must be eaten every New Year's Festival for guests, relatives and friends.
