According to legend, during the Qianlong period of the Qing Dynasty, the Qianlong Emperor issued a notice seeking delicious food, and the prefect of Lin'an Province (now Jianshui County) ordered the local chef Yang Li to make a delicacy to the emperor to please the emperor, Yang Li used hot pot, and the principle of the pot, plus the process of clay pot, created a steam pot, and then used a variety of precious medicinal materials with the steam pot method to make a steam pot chicken. Because the taste of this "steam pot chicken" is extremely delicious, the Qianlong Emperor praised it, and since then, the "steam pot chicken" has become more and more famous and has become a famous dish in southern Yunnan.
Previously, this "steam pot chicken" in Yunnan Jianshui was also selected by "China on the tip of the tongue" to be made into a documentary to show in front of the eyes of the vast number of audiences across the country, and many people praised this dish after tasting this "steam pot chicken". But there is a question, why can this steam pot make such a delicious dish? This has to talk about the principle of the steam pot, in short, the steam pot does not need to add water, put the steam pot on the pot, let the steam pour into the steam pot to become distilled water. This maximizes the nutritional composition and taste of the ingredients!
Preparation method: Prepare ingredients (half a small chicken, spring onion, old yellow ginger, cooking wine, goji berries, panax ginseng, gastrodia, cordyceps flowers), etc., to taste. In preparing a steam pot
Step 1: Cut the washed chicken into small pieces and place in a bowl.
Step 2: Wash and cut the shallots into small pieces of about three centimeters, peel and cut the old yellow ginger into slices and put them into a bowl.
Step 3: Add table salt (you can add a little more), then add an appropriate amount of cooking wine and grasp well.
Step 4: Put the well-caught chicken nuggets into the steam pot and marinate for about 40 minutes, but it is better to marinate more than enough time.
Step 5: Pick out the shallots and sliced ginger from the marinated ingredients.
Step 6: Add Panax notoginseng, gastrodia, cordyceps flowers and goji berries to the pot.
Step 7: Use a steamer to boil a pot of boiling water, put the steam pot into the steam pot, cover the lid, reduce the heat to a medium-low heat, simmer for about an hour or so, until more soup appears in the steam pot.
Note: To avoid boiling water, you can add boiling water to the steamer halfway through.
