In the mountains of Qianjiang District, Chongqing City, there are trees known as the spotted dove tree, and every hot summer, the local villagers will pick the leaves of the dove back, wash it and rub the sap out, filter the sap, and add grass and wood ash to make "tofu", because the color is like emerald, called "jade tofu". "Emerald Tofu" is fragrant and delicious, can also relieve heat, without any additives, coupled with rich pectin, protein and a variety of amino acids, has become a delicacy on the local table. From 2016, local villagers planted wild dove trees through cuttings technology, and from May of each year, they began to make "emerald tofu" from the leaves of dove leaves, and they were made until September, becoming a local enrichment industry and increasing family income.
