During the War of Resistance Against Japanese Aggression (March 1944), Bai Chongxi, an important member of the Kuomintang, wished his mother Ma Shi the 80th birthday, and Chiang Kai-shek sent He Yingqin to wish his representative the birthday of Ma Shi. He Yingqin lived in Bai Chongxi's private residence on Dongzhen Road. At night, Bai's hospitality was served with horse meat and rice noodles, and He Yingqin was full of praise after eating. The next day, he ate the brine rice noodles at midnight, and after eating them, he said: "Guilin rice noodles have so many varieties, and how beautiful their taste is!" Song Meiling came to Guilin twice with Chiang Kai-shek during the War of Resistance Against Japanese Aggression, and Bai Chongxi's wife Ma Peizhang once entertained her with brine rice noodles, and Song was also full of praise. Later, when dignitaries and nobles came to Guilin, they all asked to eat horse meat rice noodles and marinated rice noodles.

This unique flavor of Guilin began during the Daoguang years of the Qing Dynasty. Initially seen in street stalls, it has since been set up and operated successively, with more than ten such as Huixian Lou, Youyixuan, Yiliju, Yanxiangju, etc., and youyixuan is the most famous. The store has been opened in 1932 by Li Bingqing, a native of Guilin, at 252 Zhongshan Middle Road for more than 60 years. Horse meat is made of horse meat and rice noodles, which are pickled and waxed. The marinated horse meat is sweet, and the waxed horse meat is fragrant. The production of bacon meat is: choose a fatter horse, after slaughter, in case of hot weather, it must be soaked in oil to avoid spoilage. Then cut the meat into strips, put the ingredients into a tank for 3 to 5 days, take it out and shabu it in a pot of boiling water, and put it in a ventilated place (preferably in the north wind after autumn cooling) for about 10 days; Wash the air-dried meat with warm water, then go through the oil pan and scoop it up for later; When eating, cut into paper-like flakes. In addition, the horse's back backbone and foot bones are boiled continuously for about 4 hours, and the soup (but also pork bone soup) is best boiled with rice noodles.

When eating horse meat rice noodles, the bowl used is very small, and the ordinary ball (one or two) rice noodles are divided into five times, which are directly heated in the horse bone soup, fished with the powder spoon, and the soup is brought into the small bowl. Each bowl of rice noodles is filled with eight slices of horse meat, one of which is waxed, and the other seven are fresh, but they are fried and then placed in the hot soup in the bowl, accompanied by brine buckets, coriander, shredded garlic, cooked oil and small ground sesame oil, as well as salt, monosodium glutamate and peppers, and put them as much as you like. Eat horse meat rice noodles to eat while hot, its taste is pure and strange, not only for pork rice noodles, but also more delicious than beef rice noodles. The colder the weather, the better the taste; The hotter the rice noodles, the fresher it is to eat. But be careful, do not put soy sauce, otherwise there will be a sour taste.
After the liberation of Guilin, in 1958 Yixuan joined the cooperative store, in 1959 there were 6 employees, and continued to operate horse meat rice noodles, due to the shortage of horse meat supply and interrupted for a period of time. In 1976, the production of horse meat rice noodles was resumed, inheriting the original process of making horse meat, marinating and waxing horse meat, maintaining the original unique flavor, which was deeply loved and praised by the masses and Hong Kong and Macao compatriots. In 1974, the store was relocated to 8 Zhongshan Middle Road. In 1990, there were 25 employees, in addition to operating rice noodles and porridge, they also engaged in stir-fried rice and local snacks.
