"Kaifeng bucket chicken" It is a famous dish in Yu cuisine, its original name is "Peacock Open Screen". This dish is a must at family dinners and at large hotel banquets. Especially young people, I like it very much, because young people have good teeth, that is, the more you eat it, the more fragrant it is. Legend has it that this dish was created by an imperial chef surnamed Ma in the imperial palace during the Northern Song Dynasty. Because the skills of the royal chef of the horse are different from the hair removal, slaughtering, fire and marinade of all roast chickens, the color and taste are unique, and they are also named Peacock Kaiping, which is called a must. Therefore, "Ma Yi Jie" has also become a synonym for Ma Royal Chef.
During the Xuanhe period, the eighth emperor of the Northern Song Dynasty, Emperor Huizong of Song, hosted a banquet for the Prince of Jinguo in the Song Imperial Palace, and specially let Ma Yijie make the dish of peacock opening screen. After tasting it, Prince Jinguo thought this dish was very delicious. A few years later, prince Jinguo led the Jin soldiers to attack the city of Tokyo, and captured Ma Yijie by name and brought him back to Jinguo to be his imperial cook, in order to be able to eat the delicacy of peacock opening screen every day. Later, because of his attachment to his homeland, Ma Yijie risked his life to escape from the Golden Camp, carrying a pot of old soup and fleeing south with the refugees. On a snowy night, Ma Yi was sick and hungry and fainted on the streets of Jiankang (now nanjing). At this time, he was rescued by a young man named Mahaha. Under the care of Ma Haha, Ma Yijie's body quickly recovered. In order to repay the young man's life-saving grace, Ma Yi must pass on his stunt to Ma Haha.
One day, Ma Yijie held a jar in front of Ma Haha and said, "This is the old soup handed down from the ancestors of the Ma family." Three generations of my ancestors were imperial court cooks, using hens within a year as raw materials, and using it to brine the world's unique famous dish 'Peacock Open Screen'. This dish was only available to the emperor, and even the princes and ministers did not deserve to taste it. The emperor strictly prohibits the introduction of cooking methods into the people, otherwise he will commit the crime of deceiving the king and will raid the family and exterminate the clan. Until now, the fathers and villagers of Kaifeng, Tokyo, have not tasted the taste of this dish. I am now passing on this old soup and the cooking method to you, and you must promise me one condition: one day, you will return to Kaifeng with the old soup, so that the fathers and elders of my hometown can taste the delicious dish of 'Peacock Open Screen'."
When Mahaha heard these words, he immediately knelt on the ground and swore an oath to heaven. In order to avoid the southern Song Emperor from discovering and inviting the disaster of killing himself, he renamed it "Bucket Chicken" according to the shape of the chicken like a bucket.
Feeling the delicious reputation of the chicken in the kaifeng bucket, I gladly gave a poem:
Seven Laws Bucket Chicken
The first sunny day after the rain
The side of the neck wing is perforated,
Take the intestine cleverly lumen light.
Chicken fat body barrel shape,
The birds are tender and graceful.
The soup is cooked in a full layer of flavor,
The cooking technique is extremely yellow.
The Millennium Imperial Meal is in the countryside,
Li Shou feasted on the wine.
This legend is not all fiction, this dish originated from the Northern Song Dynasty Tokyo market brine chicken. During the Xianfeng period of the Qing Dynasty, his descendant Ma Youren returned to his hometown in Kaifeng from Nanjing, and brought back a bucket of thousand-year-old soup and founded the "Ma Yuxing Brine Chicken Shop" in Kaifeng City.
