Aged in beer kegs, Zunmei alcohol was the first in Ireland. Prior to this, some distilleries had also tried to age Scotch whisky and bourbon in beer barrels, but the effect was not satisfactory.

In 2013, Zunmei Alcohol was a bit lucky. Distillery Whiskey Science boss David Quinn went out looking for friends to drink. This friend is Shane Long, the founder of Franciscan Well craft beer. The two meet at a pub in County Cork. They often had a drink together in the evening, but that night was a little different, and Shane was thinking about something, and he wanted to ask David to borrow some old wooden barrels.
When David finished four or five pints of beer, Shane finally plucked up the courage and said that he wanted to put the beer into the old wooden barrel of the honorable mellow and age it. David readily agreed and thought it was a good idea. Shane brought a number of wooden barrels back to the brewery and filled his own high-quality stout beer into it. After 60 days, Shane found that the aftertaste of the beer carried the flavor of whiskey. Wait until Shane returns the barrel to Zunmei alcohol, David patted his head, since the beer can have a whiskey taste, and vice versa, why can't you try to put Zunmei alcohol into these barrels?
David then joined the team in loading the jameson original into a barrel, and all that was left to do was wait. It was a bold experiment, the risks were there, and the results were surprisingly good.
Every month, the winemakers of The Noble Wine will taste the whiskey in the barrel and look for traces of the Stout beer. Six months later, a whole new whisky flavor was born. In 2015, Gemison released the caskmates stout edition.
This time, it's David's turn to go to his friend Shane, who wants more beer barrels – ipa Indo-Ale beer kegs. Following the original barrel borrowing pattern, a deal between a brewery and a whisky distillery officially began. In 2017, Zoommates released caskmates ipa edition.
