Speaking of my hometown of Xiangxi, Hunan, I have to mention a special delicacy - bacon.

After looking up information on the Internet, I learned that bacon is not only in Hunan, but also in Sichuan, Shaanxi, Hubei and other central and western regions. According to records, more than 2,000 years ago, Zhang Lu was called the King of Hanning, and his soldiers were defeated and went south to Bazhong. Passing through the Red Temple Pond in Hanzhong, the Hanzhong people entertained him with fine bacon. However, I thought about it for a while, and I thought that bacon had become a specialty of these places, which may be the reason for the climate here. In ancient times, when freezing technology was not developed, if the meat was not smoked and preserved, people would have no meat to eat for a long time!

The bacon in my hometown is unique because of the way it is made. In winter, Grandma and Grandpa hung the marinated pork on a shelf on the roof, and there was a fire pit under the shelf. We smoked bacon while sitting in the fire pit and talking. Adults chop firewood in advance, and children go in and out like games to get firewood and add fire.
