I often see my mother buying and selling things online, and I am attracted by this fast way of shopping, and I also want to "bring goods" for my hometown.
Speaking of my hometown of Xiangxi, Hunan, I have to mention a special delicacy - bacon.
After looking up information on the Internet, I learned that bacon is not only in Hunan, but also in Sichuan, Shaanxi, Hubei and other central and western regions. According to records, more than 2,000 years ago, Zhang Lu was called the King of Hanning, and his soldiers were defeated and went south to Bazhong. Passing through the Red Temple Pond in Hanzhong, the Hanzhong people entertained him with fine bacon. However, I thought about it for a while, and I thought that bacon had become a specialty of these places, which may be the reason for the climate here. In ancient times, when freezing technology was not developed, if the meat was not smoked and preserved, people would have no meat to eat for a long time!
The bacon in my hometown is unique because of the way it is made. In winter, Grandma and Grandpa hung the marinated pork on a shelf on the roof, and there was a fire pit under the shelf. We smoked bacon while sitting in the fire pit and talking. Adults chop firewood in advance, and children go in and out like games to get firewood and add fire. The bacon was quietly listening and watching from the side, and as the days went on, it was blackened, because it had listened to so many of our parents, and had seen so many of our smiles, and it was so black.
It's a unique black, and it's not ordinary to eat. The bacon is cut and packed in a bowl, and no matter how far away you can smell its indescribable fragrance, like the sediment of the years, it is about to tell you at once, so it spews out. In my opinion, lean meat is better than fat meat, because it is full of chewiness; adults prefer to eat fatty meat, because the smoked fat meat is full of thick oil and water, which is a rare satisfaction in the days when even food was not enough in the past.
Sichuan's bacon is air-dried, but Hunan's bacon is smoked in a long winter with the fireworks of the parents and the world. In my opinion, the smoked bacon is more humane and homely. Because in the bacon, it is not only delicious, but also full of memories.
