The sandwich biscuits I ate as a child were not as colorful and varied as they are now. But by then it was already satisfying.

Biscuit ingredients: low flour 150g, powdered sugar 50g, butter 100g, egg yolk 1 piece, a little salt

Production process:
1: After the butter softens at room temperature, add powdered sugar and stir well. This way the powdered sugar does not splash out when it is sent.
2: Whisk with an electric whisk until fluffy and feathery.
3: Add the egg yolks in batches, stir thoroughly each time and add the next time.
4: Sift in low gluten flour and salt and mix well with a spatula.
5: Gently form dough with both hands, wrap in plastic wrap, refrigerate and let stand for 1 hour.
