The so-called spring water and autumn fragrance generally refers to the rich substances of spring tea, full of soup, strong taste, so spring tea is heavy water; autumn tea is lighter and thinner, and the aroma is high, so autumn tea is fragrant.

People who often drink tea know that a good spring tea waterway is not to say, the aroma is more rich and introverted, much more advanced than autumn tea, just like we choose perfume, often the high-grade aroma is by no means the high-flying.
It is now the stage of autumn into winter, but as early as early autumn, many tea stores focusing on Tieguanyin have put up banners: Autumn fragrance is coming. The tea store that specializes in Wuyi Rock Tea is also doing tasting activities, but it is a drinkable tea that has been deheated after spring tea.
Wuyi rock tea has always been precious to zhengyan, and zhengyan tea is generally only made of spring tea. In contrast, Tieguanyin seems to emphasize "spring water and autumn fragrance", which is actually the result of modern industrialization. Consequences of modern industrialization
Economy-oriented, expanding planting, dense planting of terraces, two mining a year, mechanization, etc. are all means of quantifying production capacity. The output is up, the economic benefits are soaring, and the quality can of course be degraded. In this way, the national tea is based on spring tea, only tieguanyin's "autumn fragrance" and "spring water" are flush, and even autumn is better than spring.
Some people say that the reason is that the spring in southern Fujian is rainy, and the tea season leads to excessive water content of fresh leaves, which is difficult to make and the rate of optimization is low. Then we change our perspective to look at the Zhengyan production area of Wuyi Mountain in northern Fujian, and why is it not rainy in spring? Why is it not so affected? This is the difference between one harvest a year and two harvests a year.
In addition to the regional soil climate environment, from the perspective of agricultural laws, fresh leaves that have undergone one harvest and two harvests have a large gap in the accumulation of their contents, endoplasmic structure and growth trend, which directly leads to absolute differences in the quality of production in the rainy season. The so-called "absolute difference", there is a saying in the line called success or failure, which is a problem of not reaching the standard.
The decline in the quality of Tieguanyin in recent years has led to various negative news, the market has turned from prosperity to decline, and the market has shrunk sharply. As a result, the townships of Anxi have also lost their tea mountains and the phenomenon of tea affairs being sluggish.
Blessings and misfortunes depend on each other
But there is a turning point in the crisis, several years of abandoned ecology gradually recovered, due to the cold market, had to find a new way, people with hearts from the craft, some broken years of craftsmanship but continued to come back, the real taste of ancient and early can be reproduced.
