One: Mao Zedong ate triad rice, often nostalgic for the chili peppers and bacon of his hometown; Yan'an also has a unique food vocabulary such as "Kuomintang-Communist Cooperative Rice"
During the War of Resistance Against Japanese Aggression, Yan'an was a symbol of poverty, but it was also synonymous with spiritual wealth.
In early November 1938, the newly married Xian Xinghai Qian Yunling and his wife had just arrived in Yan'an, and they were asked by the kang da students to "fight an all-round war of resistance". Here, "all-out resistance" is not a level that people usually understand, but a unique vocabulary created by the military and people of Yan'an, which means that the two sing together.
Don't say that the political and cultural field, that is, the daily life of Yan'an, also popular a unique discourse system, newcomers, if no one to help explain, do not understand or adapt. Only those who have lived in Yan'an for a long time and have completely integrated into Yan'an will smile when they hear these words.
Do you believe it? When Zeng Zhi traveled from Hubei to Yan'an and visited Mao Zedong for the first time, he witnessed the chairman eating a "triad meal." Sanhe rice, a creation of the Yan'an military and civilians, sounds beautiful, but it is actually a food cooked together from rice, millet and potatoes, which is not easy to swallow.
There are only three dishes on the table: a bowl of cabbage, a bowl of old bean sprouts with shells, and a bowl of potatoes with a few thin slices of meat. In Zeng Zhi's memory, whether mao zedong was in Yan'an or later in Beijing, he always lived a simple and simple life of rough tea and light rice and patched clothes.

When Mao Zedong was in Yan'an, he wished others a happy birthday, but refused to let others wish him a happy birthday
Food is nostalgic, and when he was in Yan'an, Mao Zedong missed his hometown cuisine. Once, he talked to Zeng Zhi about the peppers and bacon bacon in his hometown, saying that Yan'an's dishes had no peppers and no taste, and had come up with twenty yuan to ask Zeng Zhi's mother to send some bacon and bacon to Yan'an.
Zeng Zhi found that Mao Zedong's life in Yan'an was far worse than That of Wang Ming, whose life was full of chicken and duck meat and full of color and flavor. Xian Xinghai can also testify that Wang Ming and Kang Sheng did eat well, and he ate coffee, biscuits and other foods that are difficult to see in Yan'an.
Life in Yan'an is bitter and sweet. Zeng Zhi compared her life in Shanghai and Yan'an, eating sauerkraut and boiling water to make rice every day in Shanghai, while in Yan'an, at least the rice tube is full, and the cabbage and potatoes are constantly eaten, which is much stronger than in Shanghai.
Decades later, Zeng Zhi still remembered Yan'an's "three non-sticks". What is Three Non-Stick? "The so-called 'three non-stick' is to boil eggs, oil, sugar ... Sweet and fragrant and slippery, delicious. At that time, everyone needed oil and fat, so the 'three non-stick' was particularly popular..."
This is another invention of the Yan'an military and civilians!
In fact, no matter how unpalatable food is, men and women in Yan'an have given them nice names: "Kuomintang-Communist Cooperative Rice", "Lenin Biscuits", "Three Eight Soups"... Whether it is the practice or the name, the imagination and creativity of the Yan'an military and civilians are overflowing with their humorous and optimistic character.
2nd: Yan'an provides 60 pigs a month, cadres 2 kilograms of meat per month; mrs. feeds pigs to solve Xie Jueya's birthday feast; Yan'an does not eat pig blood and pigs are launched into the water
Pork, as the most important meat food in the Chinese, is also the most concerned topic of people's livelihood for the military and civilians in Yan'an. In order to eat meat, everyone showed their magic.
Often on weekends to Peng Ru, Chen Zhengren's home to fight tooth sacrifice, eat pork belly meat, with an iron box containing biscuits or enamel pot to cook it three or four pounds at a time, everyone eats belly support before stopping, is Zeng Zhi's approach, in her impression, Yan'an pork, eggs are not lacking, and it is still cheap, 2 dimes a pound.
Mrs. Tao Zhu's memoirs of Zeng Zhi revealed many of Mao's little secrets
In Yan'an during the War of Resistance Against Japanese Aggression, the basic daily necessities were rationed, and the standard in 1944 was: 1 kilogram and 32 meters per person per day for cadres in the organs, and 1 kilogram and 82 meters per person in the army. High cadres each have 4 catties of meat per month, and ordinary cadres are halved. If you want to live a life beyond the standard, you must practice production self-sufficiency.
According to the then mayor of Yan'an, there were 60,000 soldiers and civilians in Yan'an City, and the meat supply was a big challenge. According to Xie Jueya's diary, in order to ensure the basic nutritional supply and meat needs of the military and civilians in the urban area, the slaughterhouse of the border district government kills 60 pigs every month, with an average of 2 hundreds of catties per day to supply the market.
Coupled with the surrounding farmers feeding the pigs, cattle and sheep on the market, there is a daily supply of meat in the Yan'an market. Chen Xuezhao and Qian Yunling are regular customers in the market, and from time to time they shuttle through the sound of Ding Ding Dangdang's iron, buy three or five pork in the sudden rise and fall of flies, and go back to stew cabbage or stir-fried carrots.
However, there were also several strange phenomena in the pork market in Yan'an at that time: Xie Jueya found that Yan'an natives did not eat pig blood, and there was no pig blood sold in the market; while Zeng Zhi and Ding Ling's husband Chen Ming found that Yan'an natives did not eat pigs in the water. On the other hand, the price of lard in Yan'an is more expensive than pork.
There is no doubt that not eating pig blood and pig water is a huge waste. We must think of changing this strange eating habit of the Yan'an people.
Xie Jueya and Wang Zhen, brigade commander of the 359th Brigade, believe that eating pig blood is to replenish blood, and both of them have calculated that a pig weighing 110 kilograms can get 25 kilograms of pig blood, and if they are made into pig blood tofu, it is worth 625 yuan, which is equivalent to increasing the supply of pork by 2 kilograms and 928 yuan.
Don't underestimate this number. Even if the pig's blood is halved per pig, Yan'an kills 60 pigs a month, and the pig's blood is worth 18,750 yuan, which is equivalent to 44 kilograms of pork. Realizing that the people of Yan'an don't know how to eat pig blood, Xie Jueya also tried to tell the locals how to make delicious pig blood tofu.
The pig that the locals in Yan'an do not eat is a rare treasure in the eyes of southerners like Zeng Zhi, who can eat it, and they buy it at a very cheap price, change the method, and make it into a delicious feast, which is really cost-effective. Chen Ming bought pigs to feed his dog.
The handsome Mao Zedong and The Little Eight Road in Yan'an talked to each other
In order to further improve the production and living conditions in the border areas, Yan'an proposed the implementation of the "Eleventh" campaign, which includes important indicators in ten aspects, such as clothing, food, medicine, culture, and public health: for example, each household has a surplus grain for one year; each village has a loom; each household has a cow and a pig; each village has a well, and each household has a toilet.
Xie Jueya's wife, Wang Dingguo, cooperated with two other people to raise a pig, bought it when it was 45 pounds, fed it for 140 days, except for the head and feet and plate oil when killing pigs, and got 59 pounds of meat (twenty-four two oranges), 24 pounds of oil, converted down, earned 9480 yuan per month, and could earn 316 yuan per day.
At Xie Jueya's 60th birthday party, several tables were set up, and the meat was basically solved by this pig. Xie Jueya is very grateful to his wife, who is nearly 30 years old, who helped a family of five get through the difficulties through production savings, and at the same time, he also used this to vigorously advocate pig raising among his comrades and colleagues.
Raising pigs and cattle and sheep is the main way to solve the problem of eating meat for the military and civilians in Yan'an, and hunting is another way to supplement the nutrition of the military and civilians in Yan'an.
Ren Bishi's heroic posture while riding a horse and hunting in Yan'an (right)
During the War of Resistance Against Japanese Aggression, near Yan'an, wild pheasants, wild boars, yellow wolves and other wild animals were frequented, not only Lin Mike, Ma Haide and other international friends hunted in Du Fuchuan and other places in Yan'an, but even senior cadres such as Ren Bishi and Chen Bojun occasionally rode horses with guns to hunt.
For a leader like Ren Bishi, the main purpose of hunting is to relax and maintain the body, but when it comes to hunting, why not be a good material for a good meal?
