
Prepare the ingredients
Dough: 300 g of regular flour, 3 g of yeast, 5 g of sugar, 1 spoonful of lard
Filling: 1 piece of tofu, garlic leaves, chili noodles, pepper noodles
1⃣️ First to make the dough, 160 ml of warm water add sugar, yeast melting, with yeast water and noodles into a flocculent, add lard to make the bun whiter and fluffier, kneaded into a dough fermentation twice as large. (Poke a hole with your finger and ferment successfully without retracting)
2⃣️ When the dough is fermenting, we come to make tofu filling. Cut the tofu into small cubes, add the chili noodles, pepper noodles, garlic leaves, (adding garlic leaves will be more fragrant than spring onions) and pour in hot oil. Season with soy sauce, oyster sauce, chicken essence and salt
3⃣️ The fermented dough is kneaded and vented, rolled into long strips, divided into equal small pieces, pressed and rolled into a bun embryo
4⃣️ Put the embryo into the steamer basket, wait for 20 minutes to wake up for the second time, wake up the bun to pick up and float lightly, steam for 10 minutes in the water on high heat, and simmer for 5 minutes
