Tiger skin hair tofu is a well-known vegetarian dish in Anhui, and is a special flavor dish in Huizhou.
According to legend, when Ming Taizu Zhu Yuanzhang was young, he herded cattle to the rich man's family to help the workers, the rich man would not easily let go when he saw a labor force, Zhu Yuanzhang would get up in the middle of the night to help grind tofu with the long-term workers, although he was young, but he was very diligent, and these long-term workers liked him very much, so they took good care of Zhu Yuanzhang and did not let him do heavy work. After being known by the rich man and very dissatisfied, the rich man let Zhu Yuanzhang be gloriously laid off.
Where can Zhu Yuanzhang go? I had to mingle with the little beggars in front of a nearby temple. Although the long-term workers could not stop the rich man from making a decision, they still had a lot of contact with Zhu Yuanzhang. They always stole some meals and fresh tofu from the rich man's house, hid it in the haystack in the temple, and left a secret code for Zhu Yuanzhang to quietly take away and eat with his friends.
Later, Zhu Yuanzhang's family died and fled, and Zhu Yuanzhang became a little poor child and had to enter the temple as a monk. Despite this, the long-term workers still sent tofu and hid it in the grass. Entering the monastery, Zhu Yuanzhang's time was not completely arranged by himself.
Once the temple was busy making temple fairs for several days, the long-term workers saw that the tofu hidden was intact, so they did not send it again, and waited for the temple fair to end.
Zhu Yuanzhang hurried to get tofu, and found that the tofu was already covered with a layer of white hair, but in that era of soldiers and horses, stuttering was more important than anything, Zhu Yuanzhang was reluctant to throw it away, he took the white-haired tofu back to the temple, secretly took the oil in the temple that had almost reached the bottom of the fry, and felt that the taste was more delicious. Since then, he has often used this method to make tofu to eat. So the oil in the temple ate quickly, but fortunately, Zhu Yuanzhang has not been discovered.
After the Red Turban Rebellion broke out, Zhu Yuanzhang defected to the rebel army, and a few years later he was promoted to the left deputy marshal of the Red Turban Army, then king of Wu. In 1357, when he led a large army to the local camp in Huizhou, he remembered the tofu he always ate before, and specially ordered the cooking kitchen with the army to make it in the local area according to his own method, and it was passed down.
Later, Zhu Yuanzhang became emperor, and fried edamame tofu became a must-have dish in the imperial dining room. Nowadays, it is named "Tiger Skin Hair Tofu", which has become a world-renowned Chinese and foreign Famous Dish in Anhui.
