On January 29, 2021, in order to fully understand the intangible cultural heritage of the Yellow River Basin, the School of Public Administration of Henan University of Economics and Law went to Zhengzhou and Gongyi "He Xiaowen" Yellow River Basin Intangible Cultural Heritage Youth Research and Exchange Social Practice Research Group to Tongbai Road in Zhengzhou City to explore Ge Ji stewed cakes.
Before the members of the practice research team arrived at the store, an aroma came to the nose, which made the members have a great appetite, and they could not help but have more expectations for this survey. Subsequently, the research team entered the store, ordered a few stews, and while waiting, they saw that the introduction of it on the wall attracted the attention of the members. Originally, the founder of Ge Ji stew cake was Ge Minghui of the Qing Dynasty, and through the research and development of his descendant Ge Goxiang, he won the titles of "Zhongyuan Famous Food" and "Chinese Famous Snack" as early as 1995 and 1997 respectively. After a while, the stew was on the table, and the members really felt that the meat of the stew was mellow, fat but not greasy, delicious and delicious after tasting it.
Then, with the consent of the owner, the members of the research team entered the back kitchen to observe the making process of Ge Ji stewed cakes. The first is to make a cake, which is a mille-feuille cake made of soft noodles, cooled and cut into a curtain stick shape for later. When simmering the cakes, lay the bottom of the pot with green vegetables, add the bread strips and jar meat, and add the broth and simmer slightly. The owner introduced to the members of the research team that although the process is not very complicated, but each process pays attention to the "time", too long or too short will cause differences in taste, not only that, the kitchen is more stringent for the selection of ingredients, from the flour of the cake to the bean sprouts of the side dish, there are its requirements. From this process, the members felt the spirit of excellence and increasing innovation in the intangible cultural heritage.
Finally, before leaving, the members of the research group also interviewed several customers and asked them some questions about the provincial intangible cultural heritage ---- Ge Ji stewed cake, they said that young people should not only regard the stew cake as food, but should pay more attention to its intangible cultural heritage, and young people should inherit and promote the intangible cultural heritage, stimulate the vitality of excellent traditional culture, and enhance cultural consciousness and cultural self-confidence. "Listening to jun's words is better than reading ten years of books", the members of the research team benefited greatly from this exploration trip.
At this point, the activities of the research group are over, but the special thing about this time is that the intangible cultural heritage this time can not only be seen, smelled, but also tasted. It is believed that after experiencing an "intangible cultural heritage on the tip of the tongue", the members of the research group will be more interested in intangible cultural heritage.
