Green tea, also known as oolong tea, is a type of tea unique to China. It belongs to semi-fermented tea, the degree of fermentation is between green tea and black tea, both the fragrance of green tea, and the mellowness of black tea, with a unique flavor.
The production areas of green tea are mainly distributed in Fujian, Guangdong and Taiwan provinces, and the output accounts for more than 98% of the total amount of green tea in the country. According to the geographical division, green tea is usually divided into four categories: minnan green tea, northern Fujian green tea, Guangdong green tea and Taiwan green tea.
Northern Fujian green tea
Northern Fujian mainly refers to Wuyi Yanshan, Jian'ou, Jianyang and other counties and cities, including Wuyi Rock Tea, Northern Fujian Daffodil, and Northern Fujian Oolong. Among them, Wuyi rock tea is the best, Wuyi Mountain is rocky, tea trees grow in rock crevices, and there is tea in the rock rock, so it is called "Wuyi rock tea". According to the place of origin, it can also be divided into Zhengyan tea, half-rock tea and chau tea, and the quality of tea is naturally the best of Zhengyan tea, which can be summarized as "dragonfly head, toad back, sand green run, soy milk rhyme".
Wuyi rock tea is a general term for a variety of northern Fujian green tea, including tea named after tea tree varieties, such as "Wuyi cinnamon" made of cinnamon varieties of tea trees; and includes vegetable tea or other tea plant varieties called "Wuyi Strange Species"; also includes the "highlight" in Wuyi Rock Tea - Wuyi Mingcong, which is a rock tea made of some excellent tea trees, such as "Da Hong Pao", "Iron Luohan", "White Chicken Crown", "Water Golden Turtle" and so on.
Minnan green tea
Southern Fujian includes Anxi, Yongchun, Nan'an and other counties, and Minnan green tea can be divided into Tieguanyin, Golden Gui, Oolong, Benshan, color species and so on according to the varieties of tea trees with fresh leaves. Yes, you heard it right, Tieguanyin is not only a tea name but also a tea tree variety name. Anxi Tieguanyin is named because its body is as heavy as iron and shaped like Guanyin, and it is a representative of Minnan green tea.
There is a "strange flower" in Minnan green tea, that is, Zhangping Daffodil. Why is it called "bizarre"? Zhangping Daffodil is the only one of all oolong teas, unlike other strips of oolong tea, its shape is like a square chocolate, each small square is individually pressed and packaged, the inner aroma is high, the fragrance is elegant and floral.
Taiwanese green tea
Taiwan green tea is produced in Taipei, Taoyuan, Yilan and other counties in Taiwan Province, and is mainly divided into two categories according to the degree of fermentation, including baoshi and oolong.
The degree of fermentation of bao seeds is relatively light, the aroma is mainly floral, and the taste is mellow and refreshing, including Wenshan bao seeds, frozen top oolong, alpine oolong and Jinxuan oolong.
The degree of fermentation of oolong is heavier, the aroma is rich and fruity, the taste is mellow and lubricated, and the more representative teas are Taiwan Tieguanyin and Pekoe Oolong. Guangdong green tea
The main varieties of Guangdong green tea are daffodils, single bushes, oolongs and color species, of which "single bushes" include Lingtou single bushes and phoenix single bushes, "oolong" includes Shiguping oolong and Dapu Xiyan oolong, and color varieties of tea include large leaf Qilan tea, eight immortals tea, Jinxuan tea and so on. The main production areas are Chao'an County and Raoping County in Chaozhou City, and are most famous for Lingtou single bush tea and Phoenix single bush tea.
The tea produced in Fenghuang Township, Chao'an County, is called "Phoenix Daffodil" due to the combination of place name and local tea plant variety name "Narcissus", and because the tea obtained from the excellent single asexual breeding of daffodil tea varieties has a special quality style, it is also known as "Phoenix Single Bush".
In addition, the new tea tree variety selected and bred by tea farmers in Raoping County from the Phoenix Narcissus group species is called Lingtou Single Bush, also known as White Leaf Single Bush or White Leaf Gongfu.
