So, I prepared myself at home, used the materials that I could use at home, tried it, and made a pot of authentic Fuzhou cuisine "pot edge". The ingredients needed are clams, rice noodles, pork belly, green onions, ginger, and garlic.
Early in the morning, I took to the streets with my mother to pick out the freshest ingredients.
On the first day, the clams sold out after going late. Mom said that she could replace it with other shellfish first, which I strongly objected to! Because I am a good clam with this umami taste. So I had to go to the street earlier the next day to buy clams to make pot edges. (Of course, the northern friends who can't buy clams can try to make it with other shellfish, and if they have the opportunity, they still have to come to Fuzhou, Fujian to taste it.) )
I bought rice noodles at grocery stores, and it didn't seem to be very good. It is recommended that you can go to a treasure to find it, or buy rice yourself, and use a wall breaker to beat it into rice milk, which is very convenient.

The clams you buy home must spit sand, pour them into a bowl filled with salt water, let them spit for half an hour, and you can cook them with confidence.

After spitting out the clams in the sand, pour them into the pot and cook the soup for ten minutes. The clam soup is milky white, clear and transparent, and looks very appetizing. It smells like a faint fragrance.
